Description

Job Summary

Responsible for the overall efficiency and effeteness of the Continental Breakfast, Room Service, Mini-bar, Pool Service. The execution of all Hotel Alessandra and company policies/procedures, ensuring that all services provided achieve the established standards, within the agreed budgetary controls. To advise the Director of Food and Beverage on all matters relating to the Morning F&B operation and Beverages purchase. In conjunction with the F&B managers, ensure a high standard of cleanliness and hygienic practice throughout the outlets.

Responsible to oversee operations to include but not limited to the following:

Personal:

As Food and Beverages Supervisor you are to monitor and assist the managers and employees from the food and beverage division areas. This includes reporting to the Director of Food and Beverage and Food and Beverage Managers on shift details and employee performance. This is a role that is designed to monitor performance. The supervisor does not have the authority to reprimand employees or make scheduling changes.

The success of the food and beverage division depends on the harmony and relationship that supervisor will help keep with the employees. Your leadership skills should be used to motivate them toward your department goals.

As supervisor, you should comply with all hotel policies and ensure that all your employees follow and keep the discipline and hotel standards.

  • Meet health department standards in serving food for the Continental Breakfast, Room Service, Mini-bar, Pool Service and Liquor Storage.
  • Monitor Continental Breakfast Service, Room Service, Minibar Service, Terrace Service, and Pool Service to ensure all employees are working towards the common goal of customer satisfaction.
  • Supervise opening and closing duties for servers as needed.
  • Alert purchasing manager of any needs for supplies or products.
  • Inspect menus for morning operation and ensure they are presentable and up-to-date.
  • Supervise daily cleaning schedule for all equipment in the restaurant included coffee machine, toaster, table skirts, menus and liquor storage.
  • Assist with STARR Role Plays and Safety Training as required by Director of F&B
  • Maintain restaurant conditions in exceptional presentation. Create work order and follow-up completion.
  • Consistent presence in outlets to include table visits, when acting as F&B Supervisor on Duty. You should be present in all active areas to ensure proper food expedition and visit tables in the restaurant.
  • Maintain menu displays up to hotel standard. Clean, updated and according with meals periods.

Mini-bar Outlets

  • Ensure all mini-bar are checked daily.
  • Maintain monthly Pars. (Rotate mini-bar items to avoid expiration and keep “PAR”
  • Supervise Mini-bar attendees in their daily opening and closing duties.
  • Run all server daily summary sales report and verify accountability in cash transactions at the end of the shift.
  • Be present at the outlets to assist and respond employees / guest concerns and needs.

Room Service / Pool:

  • Responsible to supervise room service during the A.M. shift.
  • Inspect room service / pool orders before delivery to the rooms.
  • Supervise all opening / closing duties.
  • Solve any guest complaint and notify Director of F&B.
  • Monitor Hotel amenity Program, deliver and proper tracking sheet
  • Maintain supplies up to “PAR”. Order as needed and notify any breakage to Director of F&B.
