Job Description: FT Evening Culinary Supervisor

Responsibilities:

  • Facilitate the involvement and success of all team members by utilizing individual strengths and providing appropriate input including goal setting so that each person can reach their highest individual potential.
  • Communicates pertinent information in a timely manner to all involved in the delivery of care to the residents, i.e., Team Members, Culinary Services, Housekeeping, Laundry, Maintenance, Personal Care, Public Safety, Skilled Nursing, Social Services
  • Observe and interpret the policies and procedures when indicated.
  • Assures adequate staffing for all shifts of accountability.
  • Assures a continuity of service delivery with the shifts prior and post his/her shift of accountability.
  • Assures completion of required- departmental job responsibilities and documentation.
  • Demonstrates proactive problem-solving skills addressing crisis situations in a manner that promotes positive outcomes for all involved, i.e., residents, families, and team members.
  • Provides timely coaching/feedback for staff to hold accountability of responsibilities.

Position Specific Responsibilities & Duties: Culinary Services Supervisor (8 days/ 2 weeks)

  • Interview, train, supervise and evaluate dietary Team Members.
  • Monitor cycle menus to assure resident nutritional needs are met and resident preferences are accommodated. Be sure to enter any substitutions into Substitution Binders and have the RD sign off.
  • Evaluate and ensure sanitation compliance, temperature compliance (food and equipment), and worker safety in all aspects of the department.
  • Monitor work schedules, position assignments and cleaning schedules.
  • Participate in staff meetings and department meetings.
  • Do test-tray once a week for quality assurance and temperature accuracy.
  • Monitor all serving areas during meal service times.
  • Consult with nursing staff and registered dietitian regarding residents’ diet needs.
  • Assist in monitoring the department budget.
  • Regularly observe residents at mealtimes, monitor resident feeding issues, acceptance of meal, etc.
  • Coverage of any Culinary Service Position needed including Cook and Hospitality Attendants.
  • Serve on committees as assigned.
  • Additional responsibilities determined necessary by the Culinary Services Director.

Position Specific Responsibilities & Duties: Relief Cook

  • Provide specific direction in food preparation to the Culinary Services team assigned to assist.
  • Provide feedback to continually increase the quality of food served to the residents.
  • Preparation and production of all food according to Culinary Services Recipe binder for each resident meal in each resident dining setting.
  • Produce food as directed in all production guides as outlined in each menu cycle.
  • Organize and execute food production timely that ensures the delivery of meals as outlined in established mealtimes and standards of care.
  • Mechanically Altered food production that maintains quality while meeting the physician ordered needs of special diets consistently.
  • Provide problem solving to maintain the quality of meals delivered at times of disruption, shortfall of prepared food, lack of needed inventory for meal production, and equipment fails, or utility service occurs.
  • Assist the Culinary Services Director and AM/PM Supervisors in the development of the menu cycles.
  • Stores, dates, manages perishable food inventory to avoid food product waste.
  • Execute daily responsibilities that are safe and sanitary for oneself, team members, and the residents.
  • Maintain a neat and clean appearance (including professional food service personal hygiene standards.)
  • Follows established dress code policies for the Culinary Department.
  • Maintain a sanitary work environment that manages potential for food borne illnesses and cross-contamination.
  • Maintain a safe and hazard-free working environment such as dry floors, manage risks for cuts and burns, and other food preparation related injuries.
  • Document refrigerator, freezer, and food temperatures.
  • Complete daily sanitation logs and QA forms as assigned.
  • Other duties as assigned.

Position Qualifications:

  • Must be 18 years of age or older.
  • Able to speak, read, and write the English language.
  • Ability to work under time limits, adapt to change, be mentally alert and accurate in measurement.
  • Flexible, caring, ability to get along well with team members.
  • Understand and assist in the delivery of special diets ordered by the physician.
  • Must have basic computer skills, familiarity with therapeutic diets, knowledge of food preparation, kitchen safety/sanitation and customer service. At least one year’s supervisory experience desired.
  • Institutional food preparation/cooking experience 2 years.
  • Supervisory experience 1 year.
  • Must have strong leadership skills.
