SUMMARY OF POSITION:
The Lead Production Chef provides oversite of day-to-day culinary operations (Kitchen and Warehouse) of the Trent facility and directly manages 3 kitchen and 1 warehouse staff members. As the functional expert for kitchens, the Lead Production Chef partners with the other Production Chefs to hire competent culinary staff and ensure Standard Operating and Safety Procedures are in place. The Lead Production Chef helps coordinate food preparation and delivery for large (40 people) UGM events. Contributions with regard to personnel at the other sites is limited to training and advisory only.
DUTIES & RESPONSIBILITIES:
Key Result Area #1: Leadership and Management
  • Train, empower, and equip employees to know and practice UGM’s Core Values.
  • All direct reports know and participate in the Outcome Based Management Process (PDPs, SMART goals, one-on-ones). One-on-ones with direct reports are conducted a minimum of once a month with a focus on coaching, staff development and ensuring position expectations are met and documented in the PDP.
  • Ensure position training for all direct reports is completed within 3 months of starting position and that the New Employee Onboarding, Grace Blitz, and Life Language Seminar are attended according to HR direction.
  • Direct reports hours are approved in the time clock system weekly, verifying PTO, to ensure accurate payroll.
  • Each staff position has a current job description with clearly stated expectations designed to contribute to the objectives of the Culinary Operations Department.
  • HR and the Director of Ministries are informed of any changes to personnel, e.g., employment status, job duties, personal information.
  • Any actions taken against or by an employee are documented and sent to HR and the Director of Ministries to put in the employee file, e.g., employee warning, incident report.
  • Follow UGM budget and purchasing policies, ensuring effective stewardship of ministry resources.
  • Submit Operations Budget and Capital Expenditure requests to the Director of Ministries by May 1, annually.
  • Inform the Director of Ministries of all critical culinary operations.
  • Ensure Warehouse Manager is effectively managing the Trent Warehouse and receipt of approximately $3 million (donated food value) worth of food per year.
  • Ensure effective delivery of breakfast, lunch and dinner meals at the Men’s Shelter, approximately 300 meals per day.
  • Implement and maintain SRHD, 2nd Harvest, USDA, OSHA and WA Dept. of Health standards.
  • Ensure kitchen, storage areas and warehouse are thoroughly sanitized weekly to maintain safe working conditions and cleanliness.
  • Ensure all culinary equipment is functioning effectively, cleaned regularly, and submit Requests for Maintenance as needed.
  • Track meal counts and record in the Waypoint Database by the first week of each month.
  • Communicate schedule and unplanned changes with direct reports as soon as possible after they occur.
  • Ensure relevant training for handling food is provided to all clients within the first week they are working in the Trent Kitchen and/or Warehouse.
  • Ensure the implementation of “mise en place” by creating, posting and supervising weekly menus, recipes, pull, prep and production sheets; ensure required dietary/allergy needs are met.
  • Collaborate with UGM Departments and execute Banquet Event Orders (BEO) to help support UGM events. Personally manage the culinary aspects of the UGM Annual Gathering, UGM Connect, UGM Volunteer Appreciation and UGM Annual Commencement events.
  • Support other UGM kitchens by serving as the functional expert providing staff training and advice when necessary.
  • Provide production support for other UGM culinary locations, when necessary.
  • Maintain an effective relationship with 2nd Harvest and ensure the Warehouse Manager is submitting monthly Meal Connect reports.
  • Attend weekly Work Therapy meeting to ensure effective use of work therapy clients in the kitchen and warehouse.
  • Other duties as assigned.
Key Result Area #2: Volunteers
  • Ensure each High Impact Volunteers have a safety orientation, set schedule, and clear expectations for their role within the first week of starting their position.
  • Train High Impact Volunteers on how to effectively communicate concerns or issues with clients.
  • Track and maintain High Impact Volunteers time logs.
  • Ensure High Impact Volunteers are wearing appropriate clothing and name tags.

SKILLS & QUALIFICATIONS:


  • Committed Christian, able and willing to model servant-leadership and interested in being part of a ministry to the poor, homeless, drug addicted and mentally ill. Grounded in the Christian faith as a mature, active member of the body of Christ. In accordance with Union Gospel Mission Statement of Purpose, Statement of Vision and Statement of Faith.
  • Strong Interpersonal skills – both written, verbal and instructional. Show truth and grace using biblical conflict resolution.
  • Able and willing to honor the leadership, chain of command, standards and ministry objectives of Union Gospel Mission.
  • Intermediate computer skills using Microsoft 365, MS Word, Excel, and Outlook, Web Browser, Waypoint, UKG Ready HR; able to complete documents, build tables, and accurately record information.
  • Strong sense of calling to minister while utilizing culinary skills.
  • Proven ability to be innovative and work with variable menu creation and execution.
  • Must have experience at effectively building, developing and leading culinary teams.
  • Available to work periodic weekends, special events, holidays and at various UGM locations as needed.
  • Able to stand, be mobile and perform repetitive tasks for up to 4 consecutive hours.
  • Must be able to lift equipment/food up to 50 pounds.
  • Must have a teachable spirit and the ability to multi-task, listen, and make sound decisions.
  • Insightful, trustworthy, honest, reliable, model appropriate boundaries, and strong work ethic.
  • Valid Driver’s License with a clean driving record; Insurable by UGM’s insurance company
  • The ability to pass ServSafe Certification, Food Handlers Card and Forklift Certification
  • Minimum 5 years of sobriety, if in recovery.
  • Yearly TB (tuberculosis) infection test is required.
  • Criminal background check is required.

WORKING CONDITIONS/PHYSICAL FACTORS:

  • Work is primarily indoors with exposure to variable conditions and need to be able to withstand changes in temperature, occasional smoke, steam, heat and exposure to chemicals – continuously.
  • Requires finger/hand dexterity to operate kitchen machinery, equipment, knives, etc. - continuously
  • Ability to hear, see, taste, smell and speak clearly – continuously.
  • Working with a diverse population, many of whom struggle with homelessness, addiction and mental illness – continuously.
