Duties and Responsibilities Oversees dining and/or kitchen activities. Supervises hourly team members in accordance with The Glen's operating policies and standards. Works with team members to ensure impeccable food presentation and proper HACCP food handing procedures. Follows the The Glen's recipe for all food items. For assigned area of responsibility, plans for and writes team member schedule to ensure daily schedules are in line with prescribed shift staffing pars. Controls labor in all areas to meet or exceed standards. Inspects food receiving, preparation, production, and storage areas to ensure that health and safety regulations are adhered to at all times. Executes the general responsibilities necessary to minimize operating costs. Estimates food and beverage needs and requisitions or purchases produce, meats, poultry, fish and seafood, supplies, beverages, and equipment. Receives and checks incoming orders to ensure they adhere to specifications. Supervises weekly inventories and estimates and controls food and beverage costs. Supervises cleaning and maintenance of equipment and arranges for repairs, contracts and other services. Engages in preventive maintenance tactics to keep equipment and facilities clean, and in good working order. For assigned area of responsibility, ensures the development of team members and actively works to teach and coach hourly team members. Recruits, interviews, selects, orientates and trains qualified team members following The Glen's training validation standards. Suggests or recommends disciplinary measures of team members as necessary. Handles guest complaints following The Glen's service recovery guidelines.
