GENERAL PURPOSE OF THE JOB:
· This position will lead Food Safety & Sanitation Food Defense programs for Rudolph Foods Company, Inc. Inc. This includes leading implementation and on-going program management/oversight of our food safety audit schemes (SQF & AIB) and sanitation.
ESSENTIAL DUTIES AND RESPONSIBILITIES INCLUDE BUT ARE NOT LIMITED TO:
· Maintain HACCP/HARPC system, regulatory audits, standard operating procedures (SOP's), Sanitation Standard Operating Procedures (SSOP’s), Good Manufacturing Practices (GMP’s), allergen matrix, incoming ingredient inspections, food safety audits, food defense audits, and standardized work instructions.
· Develop and execute food safety plans (SQF & AIB) to achieve/maintain certifications.
· Develop training tools associated with food safety, food defense, environmental, sanitation, and quality; assist with training activities.
· Oversee monitoring, verification, and validation activities sanitation effectiveness.
· Help with calibration for Lethality Thermal Process validations
· Provide guidance and leadership in situations where deviations have occurred or a potential risk has been identified related to food safety, sanitation, food defense, environmental and quality.
· Oversee all facilities compliance, interactions, and relationship with SQF Certification Body.
· Coordinate AIB inspection schedules.
· Assist facilities with HACCP, HARPC, and SSOP re-assessments whenever there is a change to program, process, procedure, ingredient, equipment, industry philosophy, technology, etc.
· Coordinate responses to USDA and FDA; review all Noncompliance Records (NR’s) for accuracy and consistency.
· Understand and perform GAP analysis of self-food safety/sanitation programs and systems; Review internal and external audits performed at facilities.
· Report out to executive leadership on a Period bases Sanitation Effectiveness scorecards.
· Track, report, and review food safety and sanitation performance indicators on a regular basis to drive continuous improvement; issue corporate corrective action requests; assist with problem solving root cause analysis/action planning.
· Participates in new equipment clean design reviews and approvals to ensure compliance to standards.
· Trend microbiological (APC, Ebac, Salmonella, and Listeria) data for Sanitation Effectiveness.
· Provide technical expertise for environmental monitoring program development, monitoring and troubleshooting.
· Review ATP sanitation trends through Neogen NovaLink program.
· Keep involved informed with on changes to food safety, sanitation, and quality policies.
· Assist with the successful commercialization of new products through artwork review and communication with Operations, Engineering, and R&D.
· Routine status updates on food safety and sanitation programs with the corporate leadership team. Reflective in SOP’s up to date and accurate.
· Analyze corporate P/L for cost issues related to sanitation. Develop and implement productivity strategies that effectively lower controllable costs of sanitation labor and operating supplies, while driving sanitation standard improvements.
· Any other duties assigned by supervisor.
EMPLOYEE SAFETY RESPONSIBILITIES INCLUDE BUT ARE NOT LIMITED TO:
· Understanding basic electrical Lock Out Tag Out principles
· Wear hearing protection in all areas of the plant
· Wear protective eyewear as necessary in lab and when collecting samples from fryer
· Follow all common employee safety practices
· Must understand MSDS sheets and the safe use of chemicals
FOOD SAFETY RESPONSIBILITIES:
· Understanding of Good Manufacturing Practices (GMP)
· Basic understanding of the HACCPthe HACCP program
· Good understanding of the written allergen program
· Good understanding of the glass and hard plastics policy
· Good understanding of the AIB audit process
· Ability to identify food safety violations in the production area
· Must follow all food safety regulations
EDUCATION AND/OR EXPERIENCE:
· Bachelor’s degree in Food Safety, Microbiology, Chemistry, Food Science, or related field; or four years related experience and/or training, with at least two years in a manufacturing environment under USDA and/or FDA and HACCP; or equivalent combination of education and experience.
· Demonstrate leadership in the areas of food safety and plant regulatory affairs.
· HACCP Certification from a nationally / internationally recognized and accredited HACCP training firm.
· SQF Practitioner Certification
· Possess a thorough understanding of FDA and/or USDA inspected manufacturing facilities.
· Comprehensive experience with FDA and/or USDA Rules and Regulations.
· Must have strong organizational and leadership skills.
· Ability to analyze processes for Biological, Chemical, and Physical hazards with a thorough understanding of the science and support behind each type of hazard and each step of a production process.
· Able to work with cross functional departments within the organization.
· Good problem solving problem-solving skills and corrective action/resolution skills.
· Strong computer skills with experience using Word, Excel, Access, Power Point.
LANGUAGE SKILLS:
· Ability to read and comprehend instructions, correspondence, and memos. . Ability to write correspondence. . Ability to effectively present information in one-on-one and small group situations to customers, clients, and other employees of the organization.
MATHEMATICAL SKILLS:
· Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume. . Ability to apply concepts of basic algebra and geometry.
REASONING ABILITY:
· Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations. Ability to deal with problems involving variable situations with non-standard variables and unique situations.
