Dietary Supervisor
Position Summary
The Dietary Supervisor directs all dietary staff, purchases, and receives food to maintain food service program, supervises overall daily kitchen production, and maintains the principles of food safety and sanitation.
Qualifications
  • High School Diploma required
  • Successful completion of a course in food service supervision that meets the standards established by the ADA or completion of other courses in food service supervision required
  • Experience in Long Term Care and Food Preparation preferred
Knowledge, Skills, & Abilities
  • Ability to successfully maintain a ServSafe food sanitation certificate
  • Basic computer skills, effective communication, leadership, and organizational skills
  • Understands and has a good rapport with geriatric population
  • Knows and adheres to all departmental policies, emergency and evacuation procedures, and industry regulations, i.e., HIPAA, Corporate Compliance
  • Treats residents, employees, and coworkers as customers, providing quality service and assistance
Essential Duties & Responsibilities
  • Monitors all staff to ensure a quality resident food service experience
  • Maintain positive attitude and sets a professional example
  • Counsels and disciplines staff appropriately and reeducates and mentors when appropriate
  • Completes employee documentations, new hire paperwork, etc. timely
  • Conducts orientation and training of new staff and effectively communicates any new policies or procedures
  • Directs the production and service of meals to be high-quality, including for special functions
  • Develops and implements the routines and procedures of direct staff for efficiency of food production and service to residents
  • Implements therapeutic diets and can readily alter menu within nutritional guidelines when necessary, such as in the case of food outages, etc.
  • Maintains sanitary conditions throughout kitchen, pods, and dining rooms and keeps equipment in working condition.
  • Determines quantity needed and purchases all foods and supplies. Verifies orders upon arrival and codes all invoices for payment.
  • Maintains an inventory of all food and non-food items in the department.
  • Standardize all recipes and ensures their proper use.
  • Monitor contents of all refrigerators for expired or unapproved items.
  • Monitors dining rooms for problems and Resident concerns during mealtimes.
Non-Essential Duties & Responsibilities
  • Ensure kitchen staff is following standard cleaning procedures including the cook areas, ovens, floors, and equiptment
  • Provides recipes with food safety guidelines
  • Other related duties and responsibilities that may become necessary as directed by the Director of Food Services, including acting as a substitute Cook or Aide
  • May attend Food Committee and Resident Council Meetings
  • Educate Cooks regarding therapeutic menus
Lifting & Carrying
  • Light Heavy (75lbs max w/frequent up to 40lbs) for occasional lifting cases of meat
  • Medium (50lbs max w/frequent up to 25lbs) for occasional moving of flour bags
  • Light Medium (30lbs max with frequent up to 20lbs) is frequent for cases of cans, setting up luncheons, silverware bins, detergents, etc
Bending, Squatting, & Kneeling
  • Frequently for retrieving storeroom items, pushing/pulling carts/ using mops, filling buckets
  • Occasionally for assisting with resident care
Use of Arms, Hands, & Fingers
  • Continuous grasping (writing, holding food items, setting dishes, phone)
  • Occasional fine manipulation (computer work)
  • Continuous pushing/pulling (carts, moving stock items, sweep or mopping)
  • Occasional twisting
Other Physical & Visual Requirements
  • Standing and walking continuously for most of job duties
  • Sitting occasionally for orders, computer work, and scheduling
  • Reaching above and below shoulders frequently for retrieving or storing cooler items or stocked items
  • Must have keen senses for taste and smell
  • Keen hearing and vision
  • Frequent exposure to extreme heat and cold

Work hours will vary based on department needs
