Pinnacle Dietary is Hiring a Director of Dining Services Near Trenton, NJ

Job Duties:

*Provides leadership and support to dining services staff.

  • Represents PDG in a positive and professional manner with clients and building leadership.
  • Operates the department within the stipulated budget and is financially accountable for the dining services department.
  • Conducts food safety and sanitation self-audits routinely according to PDG policy using the audit tools provided.
  • Completes tray audits, test trays, self-assessments according to PDG policy and maintains in PDG binders provided. Audits are retained for 1 year with 6 months readily available in the binder.
  • Develops a Plan of Correction (POC) for deficient practices identified in self-audits and those completed by the regional manager within 48- 72 hours.
  • Interviews, hires, and trains all Dining Services staff. All paperwork and docs must be completed and approved for completion by PDG HR prior to any employee starting in the department.
  • Creates the department schedule to cover all shifts without overtime. (In the event where OT may be justified, prior Regional/VP approval is necessary)
  • Implements PDG policies and procedures and stays up to date and current on all policies.
  • Conducts in-services with staff according to schedule provided and more frequently as needed. Maintains in-service sign in sheets with content of in-service in PDG binders provided. In-services retained for 1 year with 6 months readily available in the binder.
  • Ensures that the department follows the Facility, Local, State, and Federal Regulations.
  • Implements seasonal menus for Spring/Summer and Fall/Winter.
  • Oversees the preparation and service of all meals and snacks.
  • Tastes all prepared food before service and demonstrates plating standards with garnish.
  • Ensures menus, spreadsheets and standardized recipes are in place and followed consistently.
  • Audits all temperature logs for completion daily and maintains logs in PDG binders provided. Logs are always retained for 1 year with 6 months readily available in the binder. Logs are filed in binder promptly on the first of the month.
  • Monitors dishwashing and pot washing activities to ensure compliance with sanitation regulations.
  • Ensures all food is prepared, stored and/or portioned in the kitchen is labeled with the appropriate information and with the approved label.
  • Conducts daily rounds to audit food stored in dry storage, walk-ins, and reach-in refrigerators DAILY for dates, labels, and proper covers and cleanliness.
  • Maintains accurate resident profiles and preferences in Meal tracker Program.
  • Completes Quality Assurance Performance Improvement (QAPI) as required by the facility in areas that have been identified to need monitoring and improvement.
  • Completes weekly accounting accurately and within required timeframe.
  • Monitors and reports daily census.
  • Performs duties necessary to maintain a management presence in the department from opening to closing.
  • Ensures all equipment is in working order and reports repairs needed to maintenance department.
  • Attends all required meetings to include weekly conference calls/TEAMS meetings and off-site training programs.
  • Regularly collaborates and consults with the Registered Dietitian (RD) as needed.
  • Performs other duties as assigned.
