Pingala Café is Hiring a Broccoli Bar Local Events Pair Near Burlington, VT

Hello! We are looking for TWO PEOPLE to run the local Broccoli Bar (food trailer) events.

We’ve found that our systems work best with two people working together, so we are looking for a pair of friends/partners/lovers/whatever that can work closely together, hold each other accountable, and cross check each other’s work to ensure successful events.

THE IDEAL CANDIDATES…
- Thrive in keeping up with high volume output
- Has a driver license(s) and clean driving records
- Are physically strong and able to safely lift 50lb pounds
- Are comfortable being outdoors in all weather
- Enjoy being in a loud and stimulating atmosphere
- Work well together and bring out the best in each other
- Are able to think creatively and problem solve on the spot
- Are able to work in a very fast paced setting for an extended period of time
- Have a flexible schedule, able to work nights and weekends, and/or long days.
- Most importantly: stay sober and focused while working; zero tolerance for anything otherwise

ONE:
Has kitchen experience, knife skills, and is able to operate cooking equipment

THE OTHER:
Has excellent customer service skills and foresight on what is needed next

ONE OR THE OTHER:
Must be comfortable driving a trailer- including backing up a trailer, hitching and unhitching and safely leveling the setup.

You will have moments of joy; seeing amazing live music, meeting so many wonderful people, being part of creating “the vibe”. You will also have moments of struggle; mud, rain and possibly flat tires. You must be able to stay positive when facing adversity and commit to making it work. This is not for the faint of heart.

A SAMPLE DAY in the life at the Broccoli Bar:

It’s Friday. Your day starts at 12noon. The day before you chopped broccoli, onions, peppers, bok choy and scallions so that you are in a good spot today. You also hitched up the trailer yesterday so you don’t have to stress about it today. One person starts filling sauce bottles; maple sriracha and yum yum. The other person mixed tempura batter. Together you load the van with all paper goods, dry goods and lastly fresh food. You use a packing list to make sure that everything made it onto the van. You help each other and work together. You put in a food order at Pingala Cafe (our neighbor in at our home base commissary kitchen), and take it with you.

You pull out and drive down to the South End Get Down. It’s a beautiful day and the sun in shining!

You pull into the lot, slow and steady. The bells on the trailer are dining, and folks heads are turning. You say what’s up to the South End Get Down crew, and find your spot. You take a moment to plan how to park depending on where the other food vendors and then pull in with ease. You back up to get it just right. You level the trailer, open the back, and start setting up. Coolers come up, equipment is turned on, rice starts cooking, all tools go in place. One of you polishes the food window and puts out all the toys, bells and whistles.

At 3:45pm you are fully set up for success and take a breather. Fill your water bottle, use the porta potty and have snack.

4:15pm is go time- food is cooking, music is on, vibe is set. The rest of your crew (two more Broc-stars) pull up ready to Broc. Folks slowly start trickling in, and by 5:30pm you have a line you can’t see the end of. You all work hard together to get it done. You do everything that is necessary to keep up: make another batch of rice (or 2 or 3 more), change propane tanks out, reload napkins, refill pickles, get ‘out ahead of it’ on dishes, answer allergy questions, etc.

At 8:30pm the crowd starts to slow down and you all pitch in to pre-close. Hot soapy water, everything gets wiped done. Food is put away. You serve the last meal, and do the final pack. By 9:30pm you’re pulling out, make a quick stop at the commissary kitchen to put away any food and then call it a wrap. Do the cash out. You’re exhausted, but satisfied. It’s a day well done. If there's no event tomorrow, do whatever, if there’s work to do the next day, go home and go to bed.

May 6-10 & May 24th: training
June 5th- October 30th: 15-30 hours/week
All local events, within 2 hours trip from Burlington. Most in downtown Burlington.

COMPENSATION:
Event days: $250/day
Prep: $20/hour
Daily meals

Job Type: Full-time

Pay: $20.00 - $25.00 per hour

Expected hours: 30 – 40 per week

Schedule:

  • 10 hour shift
  • 12 hour shift
  • Day shift
  • Evening shift
