A DAY IN THE LIFE OF A BUTCHER

Our club in Atlanta, GA is seeking to hire a full-time Butcher. You are responsible for the receiving, storage, inventory and fabrication of all meats and seafood used in the operation. You also supervise set up, operation, organization and sanitation of the Butcher Shop work area and coolers, as well as rotate and maintain stock according to standardized procedures.

You are knowledgeable of various meat cuts, sub-primal meat divisions and methods of breaking down whole fish, poultry, and seafood items. You are familiar with basic charcuterie techniques including grinding, emulsification, cooking, curing, and smoking as well as with the operation of kitchen equipment including meat grinder, band saw, cryovac machine, immersion circulator, and small appliances. Taking pride in your work area, you are conscientious about adhering to safety standards, food-handling protocols, and proper cleaning procedures, as well as safely and correctly operate all equipment. You enjoy having our beautiful grounds and facilities as a backdrop for your work and get great satisfaction out of helping your co-workers!

WORK SCHEDULE

This full-time position requires working variable shifts including holidays and weekends. The typical work schedule varies with Monday and one other variable day off.

Requirements

• 18 years of age or older
• High School Diploma or GED
• Certificate or diploma from an accredited meat cutting or butcher training program or degree from an accredited post-secondary culinary arts training program preferred
• Two year's experience fabricating, cleaning and trimming meats and fresh seafood
• Previous country club work experience preferred
• Ability to read, write and execute basic math skills
• Ability to be on your feet for long periods of time and push, pull and lift up to 70 lbs.

Experience in a meat shop with similar experience and superior knife skills are required, but multiple factors will be taken into consideration.
