POSITION TITLE: Baker

ACCOUNTABLE TO: Bakery Manager

PRIMARY OBJECTIVE:
To produce bakery product.

NATURE AND SCOPE

Emphasis in this position is on ensuring consistent product quality and meeting daily production needs. Learning challenge is developing baking proficiency with all products. This position requires ongoing judgment/decision making, math, bakery equipment operation, exposure to heat and standing. Position functions and work hours may vary according to business needs. Assignments and work direction are provided by the Bakery Manager, Bakery Merchandiser or person in charge.

ESSENTIAL POSITION FUNCTIONS

1. Mixes dough

- Plans production and adjusts to meet plan target

- Ensures proper ingredients and consistencies (scales/measures)

- Cuts off manageable sections for production

2. Completes bench work

- Separates dough into units to go through divider

- Divides dough into appropriate units ensuring proper weights are achieved

- Feeds and removes dough from depositor

- Prepares dough for proofing and baking

3. Ensures proper proofing

- Determines when items are fully proofed

- Ensures oven space for proofed items

4. Completes oven work

- Ensures proper oven space

- Monitors proper baking time and temperature for product

- Hand loads oven or loads rack into oven

5. Completes next day preparations

- Pulls frozen product to be done early next morning

- Cuts donuts for next day proofing/frying

- Mixes and molds the dough needed for next day early morning bakeoff

6. Performs fryer duties

- Prepares batter

- Fries batter

- Finishes fried product

7. Assists in all other bakery areas

- Stocks and wraps

- Assists customers with questions and requests

- Decorates cakes

- Maintains clean and safe work areas

- Assists in training associates

Functional Requirements

Frequent: Physical - lifting/carrying 15 to 100 lbs., pushing/pulling 220 to

550 lbs., equipment operation (mixer, sheeter, molder, divider, rounder, cookie cutting machine, donut cutter, scraper, scales, knives, oven, timer, racks, shrink wrapper, telephone, decorating tube, bread slicer, labeler, cleaning utensils, glazer, air brush, spatula, chemical resistant gloves, splash goggles), stooping/bending, walking on uneven ground, turning, standing, reaching, kneeling, climbing ladders

Mental - judgment/decision making, math, memorization, reading, social skills/verbal interaction, writing

Environmental – working with hot equipment, working with hot grease, exposed to fatty acids and smoke, working close to heated surfaces

Occasional: Physical – lifting/carrying 40 to 100 lbs., pushing/pulling up to

2500 lbs., equipment operation (pallet jack)

8. Follows all store and department policies and procedures

9. Ensures that proper inventory levels exist

- Communicates supply levels

- Checks invoices on product received

10. Assists in monitoring work flow and conditions

11. Education and/or Experience

-High school education (or concurrent enrollment in an educational institution) preferred but not required
