** Assistant Kitchen / Culinary Manager**

**Description**
With limited supervision, the Assistant Kitchen/Culinary Manager's (AKM or ACM) role is to support the back-of-house team members and Kitchen Manager, within a specific restaurant. The AKM or ACM assists with maintenance of restaurant kitchen standards, and by working together, as a team, to achieve established overall quality and consistency daily.
POSITION DETAILS
Maintain high quality standards consistent with Bloomin' Brands policies
Assist in set ups for the opening crew in the kitchen
Check schedules, shifts, and kitchen coverage for expected in-coming team members
Adhere to all safety procedures and hold team members accountable
Check out notes and details regarding the kitchen closure from the prior day.
Review inventory levels on a daily basis
Prepare to receive shipments and orders
Keep track of shelf-life adherence
Confirm all of the temperatures on freezers, dish machines and refrigeration units are in compliance before prepping food
Maintain knowledge of the flavor profiles and specifications of menu items
Follow recipe cards with no compromise
Review the daily sanitation checklist and conduct the necessary checks
Conduct daily health inspections
Adhere to established sanitation, temperature, and food safety standards
Observe and work the flow of order tickets to ensure quality cook times
MINIMUM REQUIREMENTS
Desire to become a certified trainer in any back-of-house functions
Desire to lead and motivate others to positively impact all guests who visit our establishments
Experience in the restaurant industry or other high-intensity customer service industry
Meet the minimum age requirement of 21 years of age
Able and willing to work a flexible schedule
PREFERRED REQUIREMENTS
Certified trainer in any back-of-house functions
Demonstrated leadership
Proficient in all areas of the back-of-house functions
