● Manage the BOH schedule. Review/Approve staff scheduling using 7shifts for BOH
● Manage food inventory on Weekly Basis
● Meet weekly to review all BEO’s for upcoming events with your Staff
● Provide Voluntary Training for all BOH to help ensure they are up to par with kitchen
● Curate all food menus for establishment and review COGs prior to executing the menu
into Production
● Schedule Kitchen cleans and make sure we follow health code
● Maintain all schedules for grease trap and hood cleaning
● Daily Maintenance review checklist for closing and opening
● Have ServSafe certificate at all times and up to date
● Following Inventory per our requirements and submission for end of the month
● Building the Brand Socially - Collaborate with the Marketing to take pictures of Food &
Cocktails and coordinate with the Marketing Coordinator to have full social media
presence at all times
● Brand Development through owners approval for offsite events, conventions, awards,
and competitions
● Train all kitchen staff to manage wastage and know all safety techniques at all times
● Maintain Ordering/Prep on a Daily Basis
● All permits and health inspections should be maintained on site and managed through
this position. Any violations on permits and inspections will be reviewed and may lead to
termination per handbook.
● Employee Discipline Process documented with HR and working with HR for Termination
Process when needed
● Document all recipes with staff to ensure consistency
● Work with FOH Manager to ensure consistency, service standards and cleanliness at all
times
● Perform Pre-Shift Meetings with all employees for BOH
GOALS
● The FOOD COG Cap (29%)- this will be reviewed quarterly and will be encouraged to
stay under 29%. All comps for owners will be removed from this target goal to ensure
it does not affect your target. Menu, catering, and private dining pricing will have to
be implemented to meet our margins and yields.
● The LABOR Cap (29%)- this is hard number we follow and maintain to ensure we are
not over spending in the Labor department. We encourage Hourly and scattered
schedules to help ensure the premier nights are covered vs the slow nights.
● Inventory should be managed weekly through Toast and once the 90 day review is
completed we will discuss to move bi-weekly. Owners must get a copy weekly to
review.
