Job Title: Food Truck Assistant Manager Wage/Hour Status: Non- Exempt
Reports to: Executive Chef Pay Grade: CN53
Dept./School: Child Nutrition Department Date Revised: January 2023
Primary Purpose:
Responsible for managing food service operations within food truck. Will supervise and train a crew of 2-3 individuals. Ensure that appropriate quantities of food are prepared and served. Meet time constraints set by menu requirements established by the Child Nutrition Department.
Qualifications:
Minimum Education/Certification
· High School diploma or GED
· Completion of ServeSafe Manager certification before or during the first year as a manager
Special Knowledge/Skills/Experience
· Knowledge of methods, materials, equipment, and appliances used in food preparation
· Knowledge of food handler safety
· Ability to manage personnel
· Effective organizational, communication, and interpersonal skills
· 1 year experience in institutional food service operations preferred
Major Responsibilities and Duties:
Cafeteria Management
· Produce and maintain food truck work schedule
· Direct daily activities on food truck
· Maintain all serving schedules and serve all food items according to menu specifications defined by departmental procedures
· Work cooperatively with campus principals to accommodate temporary schedule
· Prepare and serve quality food according to planned menu of tested, standardized recipes
· Maintain a clean, sanitary, and organized storage areas
· Promote teamwork and be willingness to work where needed to assist others
· Handle and record cashier functions compliantly
· Attend in-service workshops to keep abreast of new techniques and operations as required
· Enforce sanitation standards
· Conduct progressive discipline with subordinate employees when necessary
· Record daily absences and maintain attendance logs of subordinate employees.
· Assist with catering functions as needed (i.e., set-up, clean-up, food prep, etc.)
· Turn in required reports to the Child Nutrition Department on a timely basis
Policy, Reports, and Law
· Ensure that food is produced safely and is of high quality according to policies, procedures, and department requirements
· Maintain accurate reports of daily and monthly financial and activity records
Safety
· Ensure that food items are stored in safe and hazard-free environment
· Establish and enforce standards of cleanliness, health and safety following healthy/safety codes and regulations
· Maintain a safe work environment
· Conduct safety trainings
· Ensure foods are served and stored at proper temperature
Inventory and Equipment
· Ensure that appropriate quantities of food and supplies are available
· Maintain logs on all equipment maintenance
· Recommend replacement of existing equipment to meet department needs
· Conduct monthly/annual physical equipment and supplies inventory
Mental Demands/Physical Demands/Environmental Factors:
· Tools/Equipment Used: Use of large equipment
· Posture: Prolonged standing; frequent kneeling/squatting, bending/stoop, pushing/pulling, and twisting
· Motion: Continual walking; frequent climbing (ladder), grasping/squeezing, wrist flexion/extension, reaching/overhead reaching
· Lifting: Frequent moderate lifting and carrying (15–44 pounds)
· Environment: Work inside in commercial kitchen environment; exposure to extreme hot and cold temperatures, extreme humidity, noise, vibration, microwaves, biological hazards (bacteria, mold, fungi), chemical hazards (fumes, vapors, gases), electrical hazards; work with hands in water; work around machinery with moving parts; work on slippery surfaces
· Mental Demands: Work with frequent interruptions; maintain emotional control under stress
OTHER: All employees are to follow district safety protocols and emergency procedures.
