Job Summary:
The Prep Cook/Dishwasher will ensure the quality and quantity of prep levels are maintained at the set standard in order to ensure that the guests expectations are exceeded. Will be responsible for the cleanliness of tableware, pots, pans and cookware equipment to ensure guests expectations are exceeded.
Compensation: $17.50 hourly

Essential Duties and Responsibilities:
PREP COOK

• Understands the Hawks View values and service standards and adheres to them.
• Ensure the safety of guests and associates.
• Responsible for following the daily prep lists and maintaining prep levels; keeping waste to a minimum. Notify Chef of any missing items/ingredients needed for next shift.
• Complete prep sheets daily and monitor par levels.
• Prepare and cook according to recipes to produce standardized product.
• Coordinate production activity with the culinary team on duty.
• Keep station clean and sanitized at all times during and at the end of each shift.
• Wipe down, sweep & mop kitchen at the end of each shift, including behind and under equipment, tables and reach in doors.
• Perform all additional duties required by Lead Cook, Sous Chef or Executive Chef.
• Understand and adhere to environment standards set by the winery.

DISHWASHER

• Ensure the safety of guests and associates by keeping dish room clean and organized.
• Load, run and unload dish machine while monitoring temperature to ensure sanitization according to health codes.
• Report any machine problems immediately to Lead Cook, Sous Chef or Executive Chef.
• Wash and store all tableware and kitchenware and ensure that adequate levels are maintained for dining room, banquets, and kitchen. Handle carefully to ensure minimum breakage.
• Dispose of trash at appropriate times.

• Must be able to work in hot, wet, humid and loud environment while in standing position for long periods of time.
• Must have the ability to lift 60 lbs. at a time, up to 30 times per shift.
