Kona Kai San Diego is a boutique unique resort located on Shelter Island. With 170 guestrooms, Kona Kai Resort is home to Vessel Restaurant Bar, SpaTerre, a marina and a private club, all located just minutes from downtown San Diego. We are excited to welcome a new Director of Outlets to our island-inspired resort.

As our Director of Outlets you are the face and the host of the dining room; the one who warmly welcomes and recognizes guests. This is a hands-on position where you are actively working side by side with your team on the floor, constantly engaged in high-end service training and improving the fine details. Equally, you are a mentor and coach to your team. You are well informed on wines, partner with the Executive Chef on daily specials and let your creative juices flow with wine-pairings, specialty cocktails and exclusive buy-outs. You oversee administrative tasks (ordering, cost controls, payroll etc) and leadership functions (training, coaching and counseling).

JOB FUNCTIONS:

Efficiently manage day-to-day operations of the Outlets.

  • Create and maintain the schedules of all restaurants and bars to increase profitability.
  • Work with chefs and outlet managers/supervisors to design mouth-watering menus catering to specific customer markets.
  • Monitor food, beverage and labor costs of each sub-department.
  • Assist outlet managers by setting profit goals and maintaining quality food, service, sanitation, promotion, and merchandising.
  • Obtain client feedback regularly to recommend new marketing strategies to management.
  • Develop tools such as budgeting, forecasting, recipes, job descriptions, etc., with the help of sub-department heads.
  • Assess performance of workers regularly, provide them with training opportunities, and encourage their growth.
  • Assist in F&B training programs, including alcohol awareness and proper food handling.
  • Ensure food and beverage quality standards are met and monitor health and quality procedures.

Requirements:

The RESPONSIBILITIES:

  • Min 5 years Food & Beverage Management experience in hotel/resort management
  • Must have Food Handler's Card or Food Management Safety Certification (ServeSafe Food Manager. etc.)
  • Must have current TIPS Alcohol Training Certificate
  • Strong Microsoft Office skills required (Word, Excel, Publisher, etc.)
  • Must he able to life at least 50 lbs. and stand uninterrupted for long periods of time
  • Good communication skills. Positive attitude, strong team player, and interdepartmental collaborator
  • Exceptional guest service and recovery skills
  • Must have open/full availability, including holidays and weekends
  • Very "Hand's On" position
  • Must have strong problem solving skills
  • Must be able to recognize areas of improvement, develop strategies/procedures to improve, get buy in from other departments and associates, and execute solutions
  • Attention to details, willing to work alongside the team and lead by example
  • Maintain a positive work environment by acting and communicating in a manner so that you get along with peers, associates, guests ad upper management
  • Mentor, train and develop Food and Beverage Managers
