SUMMARY:
Supervisesthe activities in the kitchen to provide the highest quality of service andproduct to residents in a cost-effective manner.
RESPONSIBILITIES:
- Directs andsupervises all dietary functions and personnel.
- Followspolicies and procedures for the Nutritional Services Department.
- Accountablefor the proper storage of all food and supplies used by the NutritionalServices Department and minimizing loss.
- Ensures thatthe kitchen staff follows the required food handling and preparation policies,procedures, and regulations.
- Scheduleswork hours and assignments also reviews and checks staff work performance. Isresponsible to see that each shift is properly staffed.
- Isresponsible for food purchase, production, and timely service of meals.
- Evaluatesand provides direction in food production, including standardizing recipes,portion control, problem-solving, and Quality Assessment and Assuranceactivities.
- Duties aredetermined by the facility's needs and may include, but are not limited to thefollowing:
QUALIFICATIONS:
- CertifiedDietary Manager (CDM) Certificate
- Long-termCare or Healthcare experience is a plus!
