Summary / Objective : The Dietary Manager / Dietician is responsible for directing and supervising the dietary department, along with ensuring that the nutritional needs of the residents are met based on physician’s orders.

Day to day, the Dietary Manager is responsible for planning, preparing, and serving regular, modified consistency and therapeutic diets using the corporate menu program.

He / She will make the final selection of staff, and coordinate the on the job training, work performance, and disciplinary process.

All oversight regarding preparation of food and delivery of food will fall under the Dietary Manager, as well as record keeping and budgeting.

As the facility Dietician, He / She is responsible for assessing each resident’s nutritional needs, keeping open communication with physicians, providing dietary counseling and developing a nutritional plan of care.

This role is a part of the facility’s department head team, and is expected to demonstrate behaviors reflective of Bedrock Healthcare’s mission and values, and the Code of Ethics established by the American Dietetic Association.

Qualifications

Education : Must possess a Bachelor’s Degree in Dietetics from an accredited college or university and must be a registered dietitian or registration eligible by the American Dietetic Association.

Must be licensed in accordance with WI state regulations

Long term care / skilled nursing facility experience required, and a strong desire to work with the geriatric population

CDM / CFPP certification

Dietary Manager Essential Functions

Conduct routine client nutritional screening which includes food / fluid intake information and obtaining resident / patient food preferences.

Perform necessary nutritional screens for DTR / dietitian and calculate nutritive intake within the scope of practice as defined by the DMA and / or ADA.

Identify nutrition concerns and make appropriate referrals.

Implement diet plans and physician’s diet orders using appropriate modifications.

Utilize standard nutrition care procedures.

Document nutritional screen data in medical record, review intake records, do visual meal rounds, and document food intake.

Participate in client care conferences, and provide clients with basic nutritional education.

Specify standards and procedures for food preparation.

Continuously improve care and service using quality management techniques.

Supervise preparation and serving of modified consistency and therapeutic diets and supplemental feedings.

Manage sanitary foodservice environment by protecting food in all phases of preparation, handling, and service, cooling, storage and transportation.

Purchase, receive, and store food following established sanitation and quality guidelines as well as purchase, store and ensure safe use of chemicals and cleaning agents.

Dietician Essential Functions

Assess nutritional needs, dietary restrictions and current health plans to develop and implement nutrition care plans and provides nutritional counseling.

Consults with physicians and staff to determine nutritional needs and diet restrictions of patients.

Advises patients and their families on nutritional principles, nutritional goals and diet modifications, and food selection and preparation.

Counsels individuals and groups on basic rules of good nutrition, healthy eating habits, and nutrition monitoring to improve their quality of life.

Develops curriculum and prepares manuals, visual aids, course outlines, and other materials used in teaching.

Monitors sanitation standards, food temperatures and food quality at point of service in the dining room, lounges and patient / resident rooms via test trays per standards in conjunction with Dietary Manager.

Visits patients / residents identified to be at nutritional risk and family to complete a diet history and periodically to evaluate the excellence of meals served, likes and dislikes.

Participates in discharge planning, development and implementation of patient care plans as required and within designated time frames.

Plans and reviews the therapeutic and regular diet plans and menus and ensures that they are in compliance with physician orders.

Provides education to other departments in the healthcare center regarding nutritional services.

Reviews complaints and grievances of a nutritional origin and provides verbal / written responses to the NHA / CEO or designee.

Meets with administration, medical staff, nursing staff, and other departments in planning food service programs and activities.

Completes all documentation within the acceptable standards of the department. This includes evaluations, progress notes, and plans of care, charges and other necessary documentation.

Collaborates with physicians, nursing staff, ancillary departments and others as needed to provide the highest quality of care to our patients and resident.

Involves the patient / resident and family in planning objectives and goals for the patients.
