EDUCATION: Must be a Certified Sommelier and hold a High School Diploma or equivalent. Ability to speak, read, write, and comprehend the English language at a level sufficient to communicate effectively with clients, members, guests, and co-workers.
TRAINING & EXPERIENCE: Two years’ experience as a dining room captain or manager in a fine dining restaurant or private club; banquet experience a plus. Use of a Point of Sale (computer) system.
JOB KNOWLEDGE: Working knowledge of food & beverage operations, including all products (ordering, handling and control) the use of all beverage equipment and the accompanying safety features, member and guest relations, vendor relations, systems, employee relations, budgets and product and labor costs. Excellent verbal skills, menu-writing skills and the ability to convey important product knowledge in multiple settings.
JOB SUMMARY: Directs the daily operations of the Club’s wine program, maintaining exceptional member and guest relations, the highest of quality standards, (to include top service and overall cleanliness), and to maximize sales and profits. Organize, plan and execute member/guest events relating to wine while sharing and expanding the vision of the program as directed by the Beverage Manager and Director of Food & Beverage.
PHYSICAL ABILITIES: Must be able to work on feet, moving about at a quick pace for several hours at a time; Able to lift, carry and move up to 35 pounds, to include furniture, glasses, dishes, ice, beer, wine, liquor – individually on racks, trays or by cases.
DUTIES AND FUNCTIONS
1. Must be able to work a flexible schedule, to include weekends, holidays and split shifts.
2. Arrive to work on time, consistently.
3. Upon entering the property, arrive in proper uniform, crisp, clean and in good repair.
4. Hair must be clean and cut in a becoming style; management has final approval.
5. Attend all required training, safety, office and departmental meetings.
6. Report any safety hazards, follow up that hazards have been corrected, and assist with providing a safe work environment.
7. Establish and enforce high standards of appearance, cleanliness, graciousness, and service among personnel.
8. Greet members and guests by name whenever possible.
9. Working closely with the Beverage Manager, and Beverage Buyer to create & maintain a Master Wine Menu for all dining outlets, and catering/event menus.
10. Responsible for the annual submission of the Seahorse Grille wine menu for Wine Spectator award.
11. Circulate throughout the dining areas during principal hours of service, assisting both customers and service staff with wine knowledge and sales. Coaching, directing, educating and selling to maintain and increase quality of service and sales.
12. Communicate frequently with the members and guests to ensure total satisfaction and to obtain feedback, following up on observations, suggestions and complaints.
13. Order and receive supplies and product, maintaining inventory and compliance.
14. Conduct end of month wine inventory of the Dining outlets.
15. Attend product tastings
16. Hold weekly wine trainings and tastings to educate F&B servers and bartenders in all dining outlets.
17. Oversee all aspects of the Member Wine Society, wine tastings, and wine dinners.
18. Help Reduce wine cost and Increase sales.
19. Perform and follow up on any other duties as assigned by the Food & Beverage Director.
