Job Description:

Responsible for supporting the Kitchen Manager (KM) and training other BOH team members, maintaining Health Compliance and inventory, working with food and advising the KM on orders.

Key Responsibilities:

• Hands-on managing a staff of 20 people
• Engaging in the training of new staff
• Building relationships with local farmers and creating specials showcasing local ingredient
• Managing food costs with proper purchasing, recipe/portion-size maintenance, and waste management
• Writing and enforcing schedules for proper labor cost control
• Adhering to health code protocols and maintaining a well-organized, clean kitchen space
• Taking inventory and managing proper par levels
• Expediting lunch/dinner services while monitoring food quality and team efficiency
