Job Overview:

The job of the Sommelier is to assist guests with wine, champagne, and cocktail selections, consider their taste, and budget when guiding them through the menu. The Sommelier works with the Beverage Director to ensure that all beverage department inventory is up to date.

Job Duties & Responsibilities:

  • Responsible for providing technically proficient service to all guests and for being their advocate throughout their DUNE by LT experience.
  • Responsible for treating all co-workers in a respectful manner.
  • Responsible for communicating openly and thoroughly with supervisor and for bringing all guest concerns to supervisor’s attention immediately.
  • Responsible for clearly communicating schedule requests or obtaining proper approval for all shift changes and for being appropriately dressed and ready to work at the scheduled time.
  • Responsible for adherence to all DUNE by LT recipes (except for guests’ allergies), policies, and procedures.
  • Responsible for having thorough knowledge of and for being able to describe all food and beverage products accurately and attractively.
  • Responsible for having thorough knowledge of DUNE by LT, its origin, and philosophy and enthusiastically offering to share that knowledge with all guests.
  • Anticipates guest needs. Provides information to guests regarding our venues, menus, and pricing.
  • Explains how our beverage menus compliment the items on our food and dessert menu.
  • Ensures all beverages are presented and served correctly and all pouring techniques are adhered to as specified by company standards.
  • Informs and explains alternative beverage selections to guests should their choice be unavailable.
  • Follows up with guests to ensure their satisfaction, to re-pour and to potentially sell additional items as often as possible.
  • Ensures all beverages are entered into Toast.
  • Ensures that all beverage lists are always in presentable conditions and up to date.
  • Familiarity with all wines and champagnes on Beverage list.
  • Notifies the Beverage Director if stock levels are below par levels.
  • Participates in training at pre-shift meetings to improve the staff’s overall knowledge of wine in general.
  • Attends wine tastings and meetings at designated times.
  • Ensures storage rooms and wine coolers are kept neat, organized, and at appropriate temperatures.
  • Checks deliveries to ensure correct quantity, wine types and vintages are delivered.
  • Ensures that glassware and necessary equipment for wine is always within the par levels and anticipates lead times for further ordering.
  • Maintains proper inventory levels of wine, other beverages, and supplies.
  • Reports any incidents of theft, vandalism, or violations.
  • Responds to Guest concerns/complaints and correct errors or resolve complaints with a positive attitude.
  • Recognizes and acknowledges when guests are becoming intoxicated and/or are intoxicated.
  • Complies with all safety and health department procedures and all state and federal liquor laws; Maintains company safety and sanitation standards.
  • Ensures nightly/weekly and opening/running/closing duties are completed.
  • Other duties, as assigned.

Requirements:

  • High school diploma or further educational certification or degree.
  • Sufficient exposure, generally a minimum of two years in a similar type of foodservice establishment.
  • Strong knowledge of Italian and American wines.
  • Prior experience in hospitality.
  • Flexible schedule to include evenings, weekends, and holidays.
  • Strong communication skills.
  • Comfort in a high-paced/high-volume environment.
  • Solid work ethic.
  • Ability to stand, sit, bend, kneel, and reach with little to no accommodations needed for possible extended periods of time.
  • Able to carry/hold more than 10 lbs.
