BASIC FUNCTIONS:

Under department supervision, oversee and perform routine food service operational activities including ordering, receiving, food storage, food preparation, and serving of meals, setup of serving areas and the preparation and serving of food in quantity at an assigned district site(s); perform cashiering duties in the sale of food items; prepare in other food preparation and catering duties as directed; maintain facilities and equipment in a clean, safe, and sanitary condition; provide exceptional service to students and staff; and perform related work as required.

DISTINGUISHING CHARACTERISTICS:
Incumbents in the Nutrition Services Kitchen Operator class are assigned greater responsibility in coordinating, ordering, and preparing a variety of food items and supplies in a kitchen. Nutrition Services Kitchen Operator should be able to perform all duties of Nutrition Services Assistant I and II.
RESPONSIBILITIES: Coordinate and prepare the appropriate quantity of food items for cooking and baking; maintain food quality standards.

  • Plan and order appropriate quantity of all food items and supplies.
  • Forecast planned quantity for effective ordering of food and supplies; receive, label, rotate, and store food and supplies according to the First-In and First-Out product rotation principles.
  • Prepare food service facilities for the preparation and serving of food according to procedures.
  • Guide staff on portion controls and monitoring of meals to ensure compliance.
  • Coordinate and provide training and guidance to all food service staff and food service substitutes to ensure compliance, consistency, and quality assurance in all food production standards.
  • Coordinate and direct the monitoring and record keeping of food temperatures to assure food safety and quality standards.
  • Maintain a variety of mandated and requested records related to food items, temperature, inventory, menu production records, meal counts, sales, and assigned activities; prepare routine food service reports.
  • Assist in maintaining kitchen facilities and equipment in a clean and sanitary condition; including, but not limited to, preparation counters, sinks, food containers, utensils, food racks, carts, and storerooms; and deep clean all food service equipment.
  • Operate a dishwasher or hand was dishes/pots, and wash trays, plates, utensils, and other preparation, and serving equipment.
  • Set up and stock food preparation and service lines.
  • Lift and carry moderately heavy food items and supplies, with assistance as necessary.
  • Inspect food items, supplies, and equipment to ensure quality and safety standards.
  • Monitor and record temperatures of food to assure that safety and quality standards are met.
  • Serve appropriate quantities of food in a timely manner, assuring proper quality of food prepared.
  • Uses computerized Point of Sale (POS) system to record meals, review student records, and collect payments.
  • Clean and organize work area; sorts and disposes of trash, food waste, and recycling.
  • Attend meetings and complete trainings for the purpose of rules, regulations, and food safety.
  • Communicates and coordinates with school and department staff.
  • Performs other related duties as assigned.

QUALIFICATIONS:

EDUCATION AND EXPERIENCE

  • High school diploma or equivalent.
  • Two years experience in quantity food preparation and kitchen maintenance.
  • Knowledge of standard methods for preparing, cooking, and baking foods in large quantities.
  • Knowledge of food service, equipment, utensils, measurements, and portion control.
  • Knowledge of methods for cleaning and preparing vegetables, fruits, and other foods.
  • Ability to prepare, cook, and bake skillfully and set up food for service to students and staff according to established procedures.
  • Knowledge of methods of cleaning and maintaining food services areas, utensils, and equipment.
  • Knowledge of basic math, counting, and record-keeping techniques.
  • Ability to prepare and set up food for service to students and staff according to established procedures.
  • Ability to operate various food service equipment appliances.
  • Ability to maintain food service equipment and facilities in clean and sanitary condition.
  • Ability to operate a variety of technology devices, including but not limited to a computer and assigned software programs.
  • Ability to understand and carry out oral and written instructions.
  • Ability to establish and maintain cooperative and effective working relationships and communication with others.
  • Ability to provide a positive climate of customer service in all interactions and communications.
  • Ability to be organized, meet schedules and timelines, and maintain consistent and punctual attendance.
  • Ability to actively participate in staff training, meetings, work groups, and support the goals and objectives of the District and the Department.
  • Ability to lift moderately heavy objects according to safety regulations.
  • Ability to follow and ensure compliance with health and sanitation requirements.

LICENSES AND OTHER REQUIREMENTS

  • Ability to pass and maintain a Class III District physical examination.
  • Possession and maintenance of a valid California Driver License is desirable.
  • Must possess or obtain the Food Safety Manager Certification by the end of the probationary period.
  • Ability to maintain the Food Safety Manager Certificate.
