Requirements:

• Artisan bread baking experience required (at least 2 years of recent experience is required) Must be knowledgeable and have experience in baking sourdough, baguette, ciabatta, brioche, focaccia
• Must have experience and familiarity with commercial baking equipment
• Must be ok with early morning start time
• Must be available to work weekends and holidays as needed
• Must be 18
• Positions have physical demands including, but not limited to, lifting up to 50 lbs, bending, pushing, pulling, close and distant vision, extended walking and standing, working in loud and hot environments
• Be able to perform basic mathematical operations
• Proficient ability to speak, read and write in English; ability to understand and follow recipes and business documents which are written in English
• This position may also require specific uniforms and/or usage of Personal Protective Equipment (PPE) for certain tasks
• Must reliably commute or plan to relocate before starting (Orlando, 32804)
• Must prioritize cleanliness, time management, and punctuality
• Able to work accurately and quickly in fast-paced environment
• Strong team player
• Excellent organizational skills and attention to detail
• Positive attitude and a willingness to learn

Responsibilities:

• Produce a variety of high-quality breads including, but not limited to, sourdough, baguette, ciabatta, brioche, focaccia and laminated dough following our café’s recipes and standards.
• Perform duties such as maintaining starters, scaling ingredients, operating commercial mixers, loaf shaping and scoring, and baking in a steam-injected deck oven.
• Assist in the development of creative bread items that align with the overall culinary concept.
• Maintain consistent attendance and punctuality.
• Show up to work on time and dressed appropriately per the guidelines listed in the Employee Handbook.
• Maintain a clean and orderly station.
• Ensure consistency and adherence to quality standards.
• Be able to FIFO products and ingredients to ensure freshness and use of product.
• Minimize waste and control food costs.
• Pack and organize pick up orders and catering orders.
• Monitor stocks for ingredients and assist in inventory management, including the tracking of expiration dates.
• Monitor condition of the equipment, devices, and utensils used, ensuring all such tools are in proper working condition.
• Resolve conflicts in a patient and calm manner.
• Work collaboratively with others on your team to streamline operations and enhance overall efficiency.
• Maintain confidentiality of proprietary information.
• Adhere to all health and food safety regulations for sanitation, food handling, and storage.
• Adhere to all procedures and standards listed in the Employee Handbook.
• Perform other duties as assigned.
