Club Fugazi is Hiring a Kitchen Captain Near San Francisco, CA

Daily Responsibilities Include:

Purchasing and pickups daily from local vendors in the neighborhood.

Placing orders with vendors for delivery.

Managing credit-card receipt and invoices

Assist office manager with ordering

Assist house manager with supervising gea team when house manager is absent

Build good relationships with vendors

Maintaining the product cost goal

Managing inventory so that all necessary ingredients are stocked for service.

Streamlining the kitchen processes to maintain prompt service times.

Working with the food director to develop the menu and disseminate information to servers

Setting regular cleaning standards for the kitchen and verifying that staff is maintaining sanitation levels.

Assisting with stocking and setting up the kitchen stations.

Preparing food including cleaning and cutting the ingredients and cooking main dishes, desserts, appetizers and snacks.

Plating prepared foods based on set standard operating procedures.

Working with servers to ensure that orders are completed according to request and on time.

Washing and cleaning the kitchen and cooking utensils and storing the equipment at the end of shifts.

Monitor inventory levels and perform weekly inventory assessments and waste logs.

Work with management to price and change menu items as needed.

Supervise kitchen staff, Scullery, distribute work assignments

Possibly add a scullery room here? Such as grease trap maintenance and dishwasher maintenance?

This is not a complete list and duties are subject to change

Occasionally working with catering teams for special events and buyouts.

Use washing machine to clean towels and linens.

Qualifications:

A minimum of 3 years’ experience in a similar role.

In-depth knowledge of kitchen health and safety regulations.

Food Handlers Certificate.

Food Safety Manager certificate

Some experience with Gmail, Google Docs, and Google Sheets.

Highly detail oriented, able to multitask, work independently with good conflict resolution skills.

Excellent written and verbal communication skills.

Exceptional problem-solving abilities and technology tools driven.

Must thrive in a fast-paced environment.

Possess the ability to adapt to changing priorities and manage multiple projects under pressure.

Patience and a sense of humor are absolute musts for this role.

Physical Requirements and Work Environment:

Regularly sit, talk, hear, and to visually intercept visitors.

Ability to occasionally lift up to 30 lbs.

Work at a desk and computer screen for extended periods of time.

Turn, bend, reach and occasionally use a ladder.
