**Description**
Duties include, but are not limited to:
* Hires and effectively maintains staffing levels for the department.
* Responsible for properly training all employees in the performance of his or her job duties.
* Evaluates, approves performance evaluations and commensurate wage and salary increases.
* Performs disciplinary actions and terminations within the Food and Beverage department.
* Consistently establishes and maintains efficient departmental procedures and controls. Ensures adherence to procedures and controls by all departmental employees.
* Prepares daily orders to ensure all units are stocked with the appropriate level of product.
* Identifies and defines business needs and implements solutions which result in beneficial changes throughout all Food and Beverage areas of the Cimarron Casino Enterprises.
* Ensures all specifications in recipe standards are achieved and maintained.
* Maintains excellent restaurant and bar hygiene conditions at all times.
* Spearheads menu item changes based on product mix reviews and guest feedback.
* Implements and manages an effective Food and Beverage plan for the enterprise, working with the General Manager to determine current and future objectives.
* Prepares annual budgets, operating forecasts, and other required reports. Coordinates operating budgets with the General Manager and ensures that operations are maintained within budgetary constraints.
* Reviews analyses of activities, costs, operations and forecast data, to determine departmental progress toward stated goals and objectives.
* Administers all programs, policies and procedures for the Food and Beverage Department.
* Ensures compliance with all appropriate Tribal, federal, state and local laws and regulations, as applicable.
* Ensures the fair and equitable treatment of all Food and Beverage employees.
* Performs other duties as assigned.
