Culinary Team Members (Chefs, Prep/Production Culinary Staff, Food Truck Operators, Kitchen Manager, "CIC" Chef In Charge)

Job description
We are a fast-paced, growing, start-up Hospitality & Catering Company looking to expand our culinary team in various positions. Responsibilities vary by position, but may include facilitating and/or assisting in kitchen production and preparing high-quality dishes for use in the storefront, catering, & banquets. We are also looking for the right candidate to manage Food Truck events!

An ideal candidate should be comfortable working in fast-paced environments, is a team player, and looking to grow along with us! We believe in growth & promotion from within, so we encourage those that are looking to grow in this industry to apply!

Food Truck Specialist:

  • Work with Executive Chef Consultant to review Banquet Event Orders to review standards, recipes, ratios etc. for Food Truck related events to integrate into upcoming production schedules
  • Assist in scheduling of food truck related staff
  • Create & use the pack list to oversee the set-up & breakdown of food truck events
  • Coordinate & collaborate with Director of Mobile Events
  • Ensure food truck is set up with all proper cooking utensils & equipment
  • Participate in events meeting & BEO calls as needed
  • Ensure compliance with all health and safety regulations within the kitchen area
  • Quality/Line Checks: check freshness of food and equipment is in proper working order
  • Maintain the overall appearance, cleanliness, & maintenance of the food truck & it's fixtures
  • Implement protocols/procedures as necessary to ensure a well-functioning department with the assistance/support of Exec Chef Consultant, Culinary Supervisors, & Management Team
  • Ensure appealing food presentation
  • Monitor/manage stock as necessary & work with Chef Consultant to place orders for food truck related inventory
  • Complete post-event paperwork

CIC or Kitchen Manager Responsibilities

  • Work with Executive Chef Consultant to review Banquet Event Orders to review standards, recipes, ratios etc. & then create prep/production lists for kitchen work flow
  • Plan kitchen production & schedule/order accordingly with the assistance of the Exec Chef Consultant
  • Delegate tasks as needed to other culinary team members/ assign duties
  • Communicate with Management Team regarding upcoming events, culinary team questions, & plans
  • Participate in weekly staff meeting, events meeting, & BEO calls
  • Participate in company continued education initiatives
  • Implement kitchen protocols as necessary to ensure a well-functioning department with the assistance/support of Exec Chef Consultant, Culinary Supervisors, & Management Team
  • Ensure kitchen is set up with all proper cooking utensils and equipment for daily operation
  • Ensure compliance with all health and safety regulations within the kitchen area
  • Quality/Line Checks: check freshness of food and equipment is in proper working order
  • Assist in culinary team reviews & evaluations
  • Assist in hiring & training of culinary team members
  • Facilitate preparation for events (food, equipment, staff)
  • Ensure preparation of food in a timely manner to meet deadlines indicated on BEO
  • Review recipes and gather all necessary ingredients; prepare recipes to specifications indicated
  • Ensure appealing meal presentation
  • Complete post-event paperwork "CIC sheets"
  • Monitor/manage stock as necessary & work with Chef Consultant to place orders
  • Monitor & facilitate inventory of paper goods & other culinary equipment
  • Suggest new recipes, presentations, & general ideas!

Skills

  • Proven work experience as a Chef or Cook
  • Hands-on experience with various kitchen equipment
  • Advanced knowledge of culinary techniques
  • Leadership skills
  • Ability to remain calm and undertake various tasks
  • Excellent time management abilities
  • Up-to-date knowledge of cooking techniques and recipes
  • Familiarity with sanitation regulations
  • Experienced required
  • Up to Date Serv Safe certification (food handler's upon hire & manager's within 30 days where applicable)
