About B&F:

  • Bread & Friends is a bakery and daytime restaurant on Fore Street, in the Old Port neighborhood of Portland; our mission is to foster community through delicious food that is meant to be shared. Naturally leavened bread, artisan pastry, and an elevated brunch menu form the core of the B&F experience, complemented by a craft coffee program and a small wine and beer selection.
  • Bread & Friends is open 7 days a week from 8am-1pm. We are currently seeking one full time hire for our bread team.

About this position:

  • The bread program at B&F focuses on naturally leavened, whole grain, long fermented breads made from regional grain milled fresh in-house and baked in a wood-fired oven. Our goal is to strengthen relationships with small grain growers and farmers throughout greater New England to make the most delicious bread possible. Beyond our retail loaves for sale in-house and at our retail partners, we also provide many different types of bread/bread adjacent items for our brunch menu, and support the pastry team in bakery tasks.
  • Position duties include:
  • Participate in every aspect of bread production, including:
  • Scaling, mixing, shaping, and baking all bread products, including fermentation management.
  • Building and maintaining a fire in the bread oven for baking.
  • Milling and sifting fresh flour.
  • Maintain a clean and organized workstation and production area, including the mill room, the mixing room, and basement dry storage/prep area.
  • Communicate with pastry, savory, and front of house teams to facilitate the bread needs of each department.

Qualifications:

  • 1 years of professional bakery or kitchen experience required. Knowledge of or experience with naturally leavened bread is a huge plus.
  • Ability to multitask, work in a team environment, and communicate efficiently and effectively.
  • Ability to work efficiently and maintain a calm and friendly demeanor in a fast paced, high volume environment.
  • Can meet physical demands of position including pulling, pushing, carrying and lifting up to 50lbs, and standing for extended periods of time.
  • Basic math skills and the ability to follow directions and formulas.
  • Able to manage time independently and maintain an attention to detail for all tasks.
