STATUS: Full Time 80 Hours

SHIFT: Variable

GENERAL SUMMARY:

Summary:
Performs a variety of routine duties related to catering for meetings or functions within Bayhealth, either on campus or off campus. Must work primarily unsupervised with a high degree of decision making and accuracy with basic mathematics to compute recipe standardization. Determine type of set up and delivery for all catered events, and coordinate activities to ensure timely and efficient delivery of services. Delegate tasks to Caterer assigned to assist with catering events.

ESSENTIAL FUNCTIONS & ACCOUNTABILITIES:

1. Meets with Supervisor/Manager daily to discuss catering needs; including type of set-ups, type of service, cater-ware requirements, food presentation, food quality, time of set-ups and any other related details. Previews catering sheets/requests with Lead Cook/Cook and makes changes as appropriate. Sets up delivery carts each morning for function to include all equipment, china or paper supplies, beverages, serving utensils, eating utensils and table ware. Check scheduler program on computer daily to review last minute add-ons, changes, or cancellations Review emails for new requests or changes.
2. Preview all dessert needs and bakes fresh cookies daily, pulls cakes for timely frosting, bakes fresh pies, and cuts desserts and garnishes as appropriate. Determine appropriate platters for display. Prepare fresh salads and fruit bowls as needed. Attractively prepare fruit platters, vegetable platters and specialty platters as needed. Delegate tasks to assigned Food Service Workers to ensure timeliness of meals. Ensure that all foods served meet existing standards for quality, freshness, taste and appearance.
3. Work closely with conference room coordinator and housekeeping to ensure a smooth transition from set up to clean up. Make recommendations to scheduler as to preferred timing of set ups for dinners, banquets and hors d’ouevres parties. Set up meeting rooms and special events using creative display techniques, garnishing. Demonstrates creativity in the set-up and presentation of catered events and ensures a smooth flow of traffic through buffet lines. Clean all functions in an efficient and timely manner, ensuring all cater ware returns to the department.
4. Identify staffing needs for catering, and coordinate with Supervisor/ Manager with the assignment of Food Service Workers to assist with catering needs. Assist in scheduling to effectively minimize overtime, while maintaining efficient operations. Plan, delegate and coordinate activities of assigned staff to meet all time, food and equipment requirements for set ups, deliveries and clean ups. Train new workers as needed.
5. Complies with established departmental policies and procedures, objectives, quality assurance program, and safety standards to prevent the spread of Food Borne Illness. Ensures that required sanitary levels are maintained throughout the food preparation process. Maintain a high level of sanitation in all areas, including breakdown and cleaning of equipment. Cleaning should be completed using Food & Nutrition Services approved cleaning solutions. Must complete the cleaning sign off log daily, at the end of each shift. These areas will be checked through-out the day. Report any cleaning needs or broken equipment to the Supervisor/Manager to ensure follow-up with the department that will provide service’s needed.
6. Employee will attend 100% of monthly Departmental and Mandatory Staff meetings/in-services. (Day of in-service or make up session) Employee must make up all missed meetings and in-services within 10 days of scheduled dates. Completes 100% of all online education for current year.
7. All other duties as assigned within the scope and range of job responsibilities.

REQUIRED MINIMUM EDUCATION AND CREDENTIAL:

Education High School Diploma or GED

Required: 2 years catering experience in restaurant, hospital or other hospitality industry setting Preferred: 3 years formal catering experience
