TITLE: Bakery Manager

BASIC PURPOSE AND FUNCTION: To direct and control the operation of the Bakery Department. Ensures customer service and product quality, freshness and selection. Supervises department personnel. Plans and implements production and orders merchandise.

DUTIES AND RESPONSIBILITIES:

Requires working knowledge of all job duties including Cake Decorator, Baker, and Sales Associate.

Maintains and encourages an atmosphere of fast, friendly, courteous customer service. Handles customer relations.

Engages in suggestive selling and other sales techniques.

Responsible for performing one of the primary job duties, which include Baker, Decorator, or Sales Associate.

Responsible for planning and monitoring production to control shrink and stales. Satisfies departmental projected sales, gross margin and cost objectives. Creates effective promotional and seasonal displays. Communicates in-store advertisements over the intercom.

Proofs and bakes products such as: rolls, breads, cookies, pastries, and donuts. Ice donuts. Assists customers by taking and filling special orders for baked goods. Operates related equipment including mixers, microwave, bread slicer, ovens, and proof boxes. Uses work aids such as box knives, knives, scrapers and scales.

Orders, checks, receives and controls inventory to ensure adequate product quantity, quality and freshness. Takes periodic inventories of all bakery items, computes gross profit, processes administrative paperwork, and maintains accurate department records.

Supervises, motivates, directs, trains and participates in the hiring of Bakery Department personnel. Monitors associate performance and recommend personnel action such as hiring, firing, layoff and disciplinary action. Schedules personnel to ensure adequate coverage and service level.

Responsible for cost and quality control. Maintains a safe and secure work environment. Ensures compliance with cleanliness and sanitation standards, and all other department policies and procedures.

Responsible for performing all job duties and responsibilities with honesty and integrity.

Responsible for completing C.G.T. program.

Responsible for and performing teaching sales associate proper and effective product demonstrations.

Other necessary and required duties.

SKILLS, PHYSICAL REQUIREMENTS AND WORKING CONDITIONS:

Requires strong communication skills, good leadership and interpersonal skills, the proven ability to manage people, and the ability to maintain composure in dealing with customers and co-workers.

Requires knowledge of interviewing techniques, and the analytical ability to handle administrative details such as planning orders, sales projections, scheduling, supervising and making hiring decisions.

Requires a good understanding of overall company practices and Bakery Department policies and procedures. Requires the ability to judge and react to business activity.

Requires previous experience as a Sales Associate, Decorator, or Baker.

Ability to stand for long periods of time. Ability to frequently reach, lift and maneuver objects of varying dimensions and weights up to approximately 55 lbs. Requires manual dexterity, good eye-hand coordination and good balance. Ability to push and pull fully loaded pallet jacks, four-wheel, and six-wheel carts. Ability to walk quickly and work at a production rate of speed. Ability to use trash compactor and bailer.

Mental alertness is necessary to ensure safe and accurate completion of work activities. Requires knowledge of baking procedures, safety and sanitation procedures, basic math including calculator, and weights and measures. Ability to understand baking instructions and finished product weights. Requires legible handwriting and the ability to read and follow written instructions. Requires knowledge of taste, content, handling and perishability of products, and department and company policies and procedures.

Exposure to potential hazards exists with respect to utensils, baking procedures, baking ingredients, and cleaning procedures, equipment and work aides necessary to complete job duties. Frequent exposure to 400 ° Fahrenheit while baking products. Frequent exposure to -20 ° Fahrenheit while handling products in the freezer. Frequent exposure to flour dust. The work environment consists of a production area in the Bakery Department within a temperature controlled store environment. Hands are frequently exposed to water and cleaning agents.
