- Bar Scheduling - bartenders, bar backs
- The Bar Manager is ultimately responsible for making sure the bar is appropriately staffed for every shift.
- The Bar Manager will be available to work the highest volume shifts - ensuring the highest level of service.
- Hiring and interviewing of bar staff - pre screening and 1st interviews
- When it is deemed necessary to hire bar staff, the Bar Manager will be ultimately responsible for seeking out potential bartenders.
- The Bar Manager is responsible for setting up all first interviews with potential employees and then referring qualified applicants to the General Manager for second interviews.
- Ordering, Inventory - BLW and paper and cleaning supplies
- The Bar Manager is responsible for making the necessary adjustments in scheduling for inventory purposes. This means the bar will be covered and the Bar Manager will perform inventory counts with or without assistance from the bar team.
- Inventory must be counted and entered in the computer on the day specified by senior management. It is the Bar Manager’s responsibility to know when inventory is expected. It is not the responsibility of senior management to notify or remind the Bar Manager of upcoming inventory dates.
- The Bar Manager must maintain proper stock of all beer, wine, liquor, bar related paper products, fruit and mixers.
- Training
- The Bar Manager will be held accountable for the training of all the bar staff.
- The Bar Manager is responsible for personally training new bartenders. A certified bar trainer may be trained. The certified trainer must be approved by the General Manager.
- The Bar Manager is responsible for updating training materials as needed.
- The Bar Manager is responsible for training all service staff on all new items as beer, wine and cocktail menus change. The Bar Manager will ensure that all build sheets and recipes are kept current in the bar recipe guide.
- Monitor Beverage Costs
- The Bar Manager will input all recipes into a costing spreadsheet before introducing them to the General Manager. All recipes and costs must meet the General Manager’s approval before being sold in the restaurant.
- Supply cost must be monitored and updated in the inventory sheets. Beverage prices will be updated accordingly.
- Stay within bar budget as allocated by GM and Senior Management
- The Bar Manager will be held accountable for keeping the total bar cost aligned with company goals.
- Promote items to effectively lower bar cost and maintain a healthy product mix.
- Order efficiently to keep within guidelines of bar cost goals.
- Stay within bar labor budget and staffing requirements
- Schedule within the boundaries appointed by the General Manager.
- Make appropriate cuts and adjustments when needed according to business levels.
- Coordinate and collaborate with other bar managers to ensure consistency of processes and bar menu items.
- Conduct periodic meetings between restaurants to ensure procedures are kept consistent.
- Coordinate group training for new product launches.
