SUPERVISOR’S TITLE: Dietary Services Supervisor

WORK SCHEDULE: Varied Hours,

Sunday – Friday, 5:00 AM – 7:00 PM

SUMMARY OF POSITION RESPONSIBILITIES:

Under the direct supervision of the Dietary Services Supervisor, Kitchen Staff will be responsible for preparing meals according to recipes for residents and staff. In addition, Kitchen Staff will be responsible for cleaning all items used to prepare and serve meals, maintaining a sanitary kitchen, in addition to maintaining an inventory of supplies needed for the kitchen. Work schedule may include occasional weekends, holidays and irregular hours when necessary or warranted.

ESSENTIAL DUTIES:

• Ensure that dishes are clean by cleaning cookware and other utensils used by residents and staff.
• Ensure that the supply of cookware for food preparation is adequate and functional.
• Prepare meals for residents and staff per meal plan created by the Dietary Consultant and Dietetic Service Supervisor. This includes preparing main dishes, side dishes and desserts.
• Follow recipes assigned to cook by Dietetic Service Supervisor and Dietary Consultant.
• Prepare uncooked food in cookware and place them in ovens or in cookers for preparation purposes and monitor the time needed for each dish to cook and remove cooked dishes.
• Aesthetically place food items on plates and platters for serving purposes.
• Ensure large kitchen equipment is cleaned on a daily basis.
• Ensure ice machine and coffee machines are cleaned by professional service on a bi-yearly basis.
• Ensure walls, floor, and windows located behind the sink are washed on a weekly schedule.
• Arrange for ovens and cooking ranges to be set at proper heat levels.
• Ensure cooking area is prepared before the meal service preparation begins. Prepare any important items like vegetable broth, cutting vegetable and boiling water.
• Ensure cleanliness and sanitization is completed in all kitchen areas such as the floor, kitchen counters, shelves, cooking pots and pans, stoves, griddles and ovens.
• Place prepared dishes and platters on trays to make them ready for serving.
• Ensure the trash is emptied on a regular basis, as needed, several times per day.
• Monitor temperature on kitchen refrigerators and freezers.
• Monitors and make inventory and report on kitchen items that need to be reordered.
• Prepare food items for the daily menu which includes chopping, sorting, washing and proper storing of food.
• Wash and dry dishes, flatware and glasses.
• Fill water coolers with ice and water on each floor, from porch and courtyard.
• Rotate food items in cold and dry storage and dispose of any expired items.
• Responsible for maintaining a clean uniform.
• Understanding the importance of health and hygiene.

SECONDARY DUTIES:

• Prepare food for facility functions outside of regular meal preparation.
• Perform other duties as assigned.

LEVEL OF EDUCATION/QUALIFICATIONS/REQUIRED CERTIFICATION/LICENSE:

• Complete an accredited Food Handler training and certification, approved for use in the State of Illinois, within 30 days of hire and renewed every 3 years.
• Knowledge, skills and abilities required:
• Knowledge of kitchen sanitation.
• Basic knife handling skills.
• Basic reading and math skills.
• Ability to lift over 50 pounds on a regular basis.
• Basic knowledge of kitchen equipment.
• Ability to understand and carry out directions, which includes the ability to measure ingredients accurately and follow recipes.

TRAINING:

• Complete annual DHS-DMH training on the specific topics and training hours prescribed Section 380.130.

PHYSICAL DEMANDS/WORKING CONDITIONS:

• Regularly walk, stand or stoop; occasionally lift, carry, push, pull or otherwise move objects or people at a minimum of 25 pounds.
• Work is performed in an office, nursing station, utility room and throughout the facility; Work exposes employee to contagious or infectious diseases.
• Work may expose employee to dangerous and volatile situations; which could result in bodily injury.
