 Chief Steward at Conrad Nashville

Job Summary: The Chief Stewards primary responsibility is to coordinate with the Chef’s Department to be sure each department has the required equipment and steward staffing needed for daily operations. In addition to staffing, the Chief Steward will be responsible for overseeing and managing the upkeep and care of all cooking and ware washing equipment for the hotel.

Essential Functions: 

  • Responsible for delegating and ensuring that employees accomplish job requirements of the department
  • Assist the Assistant Executive Stewards and Executive Steward in all phases of the department requirements
  • Work closely with the Chef’s department and all general managers in order to ensure quick and efficient operations of each restaurant outlet
  • Assist with on the interviews, hiring and job training of all stewarding employees
  • Perform walk through inspections of kitchen areas and checklist
  • Maintain all employee records including but not limited to attendance tracking sheets, checklist, daily reports, and disciplinary forms
  • Oversee Human Resources issues as related to the department including but not limited to personnel issues and disciplinary actions 
  • Must represent Conrad Nashville’s F B Department and actively participate/engage with Hilton representatives throughout the processes of the Hilton QA program and all property walk throughs/ action plans presented by Hilton. 
  • Responsible for special cleaning projects within the department 
  • Ensure proper cleaning and Health department procedures are being utilized throughout entire department

Qualifications: 

  • 6 years of experience in a hotel, restaurant, or catering facility of similar caliber preferred. 
  • Must have a working knowledge of kitchens, dish machines, silver-plated equipment care, polishing, and chemical awareness. 
  • Experience in fast paced high volume atmosphere.
  • Exceptional organizational, verbal, and written communication skills.
  • Ability to multi-task and perform calmly in a fast-paced environment.
  • Strong attention to detail.
  • Ability to read, write & speak fluent English.
  • Professional appearance and demeanor.
  • Obtain and maintain position- specific licensing. 
  • Flexible schedule. 
  • Must maintain the mental and physical stamina to work extended shifts and days.

Physical Requirements:

  • Most work tasks are performed indoors, temperature can be very hot with or without control of environmental systems.
  • Must be able to stand for long periods of time
  • Must be able to maneuver between stations and areas efficiently and easily.
  • Must be able to lift up to 40 lbs.
  • Requires manual dexterity to use and operate kitchen and other equipment.
  • Must be flexible to work any time/day of the week, weekends, and holidays if assigned.
