This is a Full-Time position: Sunday-Thursday 7:00am-3:00pm

The Nativity House Lead cook is responsible for preparing and cooking breakfast and lunch for our homeless guests. This position supervises and coordinates activities of volunteers engaged in serving, food preparation and cooking, dishwashing, and enforces our “Clean as you go” policy. The cook plans meals based on the incoming inventory each day and the food in the freezer/refrigerator to minimize waste and spoilage. The afternoon cook is responsible for ensuring that the volunteer groups who come in to assist in the kitchen whether it is cooking or helping out on the line to pass out food for our homeless guests know how to use our kitchen equipment correctly and assist them with any questions that they may have about preparing the food. Lead Food Coordinator with the assistance of volunteers will ensure that the kitchen is clean, all food is put away, wipe down serving and cutting counters, and kitchen equipment, sweeping and mopping floor before they leave. Food coordinator will be responsible for cooking the meal if there is not a volunteer group signed up to cook meals. This position will work weekends and holidays.

Food Preparation Duties

  • Meal Preparation and Kitchen Operations
  • Work in a fast-paced environment to menu/meal plan, prepare, and cook meals for shelter participants (and other meals if capacity allows).
  • Work collaboratively as a team with positive and consistent communication to problem solve and meet the food needs of shelter participants.
  • Adhere to high food quality and nutrition standards to ensure resident satisfaction.
  • Create and maintain systems for labeling and storing all food donations in pantries, freezers & walk-in refrigerators per OSHA and USDA regulations.
  • Maintain cleanliness and sanitation standards, systems and guidelines for all staff to follow in the kitchens (per USDA recommended standards). Following all opening and closing kitchen procedures daily.
  • Communicate and cooperate with the full kitchen team, including shelter staff and volunteers, about kitchen systems, schedules, capacity and expectations.
  • Weekly donation pickup from community foodbank, pantries, and other community partners. The lead cook will be in charge of sorting and storing the donations received.
  • Weekly Meal/Menu Planning
  • Consult with shelter team to understand dietary needs and restrictions. Understand meal preference for adults and children at the shelter.
  • Use donated pantry and walk-in items each week to avoid waste and reduce costs.
  • Ensure all meals are planned for the week/weekend
  • Cleans all kitchen equipment and recommends repair and service needs to the Operations Assistant

Office and Staffing Duties

  • Work with the Shelter Food Program and Donations Coordinator to comply with food donor reporting and requirements (temperature logs, weight logs, donation receipts, etc.)
  • Lead Food Coordinator will lead two part time lead coordinators with additional direction from Day Center Supervisor and Evening Supervisor.
  • Collaborate with volunteers and meal providers around the shelter kitchens and systems. This includes light training, delegating tasks, and assisting kitchen volunteers in preparing meals and/or cleaning pantry and kitchen areas.
  • Participates in training and staff meetings.
  • Other duties as assigned
  • Required Culinary Degree or 2 year experience as a line cook, prep cook or back of house employee in a restaurant or institutional kitchen environment.
  • Required - experience maintaining a kitchen using USDA, OSHA, and FDA standards.
  • Required experience cooking for large groups of up to 150.
  • Preferred - experience working in a non-profit or food justice related position.
  • Current Pierce County Food Handlers Card.
  • Ability to respond quickly to program changes.
  • Requires the full manual dexterity, eye-hand coordination and alertness to use mechanical equipment.
  • Applicant must successfully pass required background checks prior to an offer of employment.
  • Must have reliable transportation, valid driver’s license, and automobile insurance.
  • Must have an acceptable driving record per CCS’ driving policy. (required to provide current driving abstract).
