Kitchen Supervisor

Description

Essential Duties and Responsibilities :

  • Manage culinary outlet operations
  • Ensuring quality and consistency of food products
  • Ensure proper sanitation of all equipment and maintain a clean work area at all times
  • Ensure compliance with all prescribed food and safety standards
  • Complete food temperature checks before service and monitor proper food temperatures during service
  • Complete prep for all line positions to quality standards and expectations, as required
  • Complete general prep for restaurant and banquets as directed by the Executive Chef
  • Maintain daily production records
  • Reports necessary equipment repair and maintenance to Executive Chef
  • Train, develop, motivate and direct staff
  • Assist with receiving / rotation / storage of product and physical counts, as needed
  • Assist with supervision of prep cooks, line cooks, and dish staff
  • Supervise and assist with beginning and ending shift set-up and breakdown
  • Correctly prepare all food served following standard recipes and special orders
  • Plan food production to coordinate with meal serving hours so that excellence, quality, temperature, and appearance of food is preserved

Skills and Qualifications :

  • High School diploma or equivalent.
  • Prior experience in related food service position required; ServeSafe Certified
  • Culinary degree preferred and / or cooking experience to equal three years
  • Work all line positions with proficiency and consistency, as needed
  • Knowledge of culinary techniques, proper food storage, safety and sanitation practices
  • Must have strong written and oral communication skills.
  • Must be able to stand for up to four (4) hours at a time
  • Must be able to reach, lift, bend, kneel, stoop, climb, push / pull items weighing 50 lbs
  • Professional demeanor and appearance, and demonstrating a solid work ethic in a fast-paced environment
  • Knowledgeable in the use of kitchen equipment, i.e., oven, stove, slicer, steamer, mixer, and chefs knives
  • Possess ability to work as part of a team, multi-task and work in a fast paced environment
  • Possess ability to monitor / assess performance of staff to make improvements or take corrective action
  • Possess ability to motivate, develop, and direct staff as they work
  • Must be able to work weekends, holidays, evenings and other shifts as necessary
  • Valid Drivers License and a clear driving record

Other Functions : All other duties assigned or necessary to support the resort as a whole.
