The PROCESS CONTROL TECHNICIAN controls retort chamber (saturated steam process) to cook canned foods according to specifications: Utilize automated systems to convey baskets to retort chambers, monitor retort valves, control temperature, pressure, cooking time, release steam, and introduce cooling water into chamber to prevent overcooking at end of cooking cycle. Utilize process computer to perform automated retort operations.
