The PROCESS CONTROL TECHNICIAN controls retort chamber (saturated steam process) to cook canned foods according to specifications: Utilize automated systems to convey baskets to retort chambers, monitor retort valves, control temperature, pressure, cooking time, release steam, and introduce cooling water into chamber to prevent overcooking at end of cooking cycle. Utilize process computer to perform automated retort operations.
RESPONSIBILITIES:

• Use Quality Assurance controlled formulas to process and ensure fully cooked products.
• Reference schedules, batch records, and process sheets to ensure compliance.
• Monitor critical factors for temperatures, pressure, water and RPM in retorts.
• Evaluate and interpret process data from retort monitor screens and chart recorders.
• Record process data on Quality Assurance documents and maintain proper paperwork.
• Troubleshoot and resolve basic processing issues with the retorts, conveyors, loading and unloading sequence.
• Utilize IT department, maintenance, and Quality Assurance to solve issues efficiently.
• Manage critical control points on every load and every recipe.
• Manage process deviations and other Quality Assurance non-conformities.
• Inspect can products for defects, including body dents, loss of seal and potential leaks.
• Address retort loading safety issues and other manual processes.

• Document setup and process deviations of the product.

• Spot checking to assure compliance with approved procedures and process operations of Systems

• Responsible for change overs, set-up, cycle control processes and manual processes as deemed necessary.
• Engage in problem solving to assist in improving safety, quality, yields and productivity.
• Must adhere to all safety policies and procedures.
•  Follows all DFA GMP’s and works in a manner consistent with all corporate and regulatory, food safety, quality and sanitation requirements.
•  Perform other duties as assigned to support the needs of the business.

QUALIFICATIONS:

• Knowledge of a process environment and computerized systems.
• Food Inspection / QA experience a plus
• Ability to document procedures in a clear, meaningful and easily understood manner.
• Highly organized and familiar with Microsoft Office products.
• Ability to clearly present technical information to audience of different levels of understanding.
• Ability to work unsupervised once trained
• Must possess mechanical and technical aptitude.

EDUCATION:

• Must possess minimum two year degree, plus one year of experience in manufacturing processes
• Must possess mechanical and technical aptitude..
