Job DetailsJob Location
1900 Eddy Creek Marina Resort - Eddyville, KY
DescriptionThe Culinary Lead will lead a group of Cook 1 Specialist and Cook 2 in support of food preparation, food service execution and maintaining a healthy and safe kitchen environment.
  • Leading culinary team up to 8 persons
  • Scheduling of cooks and dishwashers
  • Create food production volume
  • Onboard and train cooks
  • Production and preparation of food for a la carte, events, and banquets
  • Cover variety of kitchen stations during service hot stations (fry, sauce, grill, roast, bake) and cold stations (salads, appetizers, desserts)
  • Supporting physical inventories
  • Ensure ingredients and final products are fresh
  • Follow recipes, including measuring, weighing and mixing ingredients
  • Bake, grill, steam and boil meats, vegetables, fish, poultry and other foods
  • Present, garnish and arrange final dishes
  • Maintain a clean and safe work area, including handling utensils, equipment and dishes according to all regulatory and company standards and expectations
  • Handle and store ingredients and food
  • Maintain food safety and sanitation standards
  • Clean and sanitize work areas, equipment and utensils
  • Execute opening and closing procedures
  • Set up workstations with required ingredients and equipment
  • Operate kitchen equipment such as broilers, ovens, grills and fryers
Education, Work Experience Requirements and/or Competencies:
  • 2 Years minimum experience in a similar position preferred.
  • Experience with ordering food and supplies
  • Basic understanding of cost: food, labor and supplies
  • Experienced with fast phased, high volume and elegant a la carte operations
  • Basic comprehension of English oral and written language
  • Ability to read and measure recipes.
  • Able to apply basic knife skills required for preparation.
  • Knowledge of weights and measures.
  • Exhibits a good knowledge, understanding and application of various cooking techniques.
  • Basic knowledge of cooking utensils and equipment, pots, pans, dish ware, silverware, glassware, food slicing machine, knives, oven, grill/stove burners, microwave appliances, brazier, steam kettles
  • Food handler ServeSafe certification
Physical Requirements:
  • Ability to safely and successfully perform the essential job functions consistent with the ADA, FMLA and other federal, state and local standards, including meeting qualitative and/or quantitative productivity standards
  • Must be able to talk, listen and speak clearly on telephone and in person.
  • This position is characterized by typically physically light, administrative work, but does require occasional heavy work requiring the exertion of 100 pounds of force occasionally, up to 50 pounds of force frequently, and up to 20 pounds of force repetitively to lift, carry, push, pull and reposition objects.
  • Ability to traverse about a variety of environments and obstacles throughout the marina, with or without reasonable accommodation.
  • Ability to remain stationary at a keyboard for extended periods of time and continuously operate a computer and other office productivity machinery, such as a calculator, copy machine, and printer.
  • Ability to manipulate objects and demonstrate small, precise movements repetitively.
