BAY MILLS GAMING AUTHORITY is Hiring a Director of Food and Beverage Near Brimley, MI

POSITION SUMMARY:

Under the direction of the General Manager, the Director of Food and Beverage oversees all facets of F&B operations, including Sacy’s Restaurant, Back Bay Grille & Games, Casino Bar, Conference/Catering, Lakeside Lounge and retail operations. In addition, the position also oversees all purchasing, inventory, hiring, training, quality control, recipe and portion adherence, and control, sanitation and housekeeping, budget development, pricing and cost control.

ESSENTIAL FUNCTIONS:

  • Provides exemplary customer service by “Exceeding Expectations One Opportunity at a Time”.
  • Works with the management and supervisory team to establish and promote the annual goals and objectives of the department.
  • Prepares, implements and compiles data for the budget, including forecasts and those reports pertinent to a sufficient review and assessment of F&B outcomes.
  • Operates the F&B department within approved budgetary guidelines.
  • Proactively monitors department expenditures and revenues on a consistent basis and makes those changes necessary to ensure maximum profitability and efficiency.
  • Develops and enforces an efficient food service portion control plan that takes into account product availability, cost, delivery time and forecasted sales.
  • In conjunction with the General Manager and the Marketing department, prepares and executes an annual marketing plan for F&B operations.
  • Oversees all events where F&B services are required, including VIP invited events, entertainment, cocktail, gaming promotions and other social events.
  • Develops and enforces high customer service standards through a consistent staff training program.
  • Develops and maintains a strong connection with property guests through event participation, venue visits, service follow-up and addressing customer issues and concerns in a timely manner.
  • Ensures the highest standard of cleanliness for all F&B and retail operations through the establishment and enforcement of thorough clean-up procedures.
  • Interviews and considers for hire qualified applicants screened by Human Resources.
  • Develops and implements a staff training program to ensure skill development, customer service, staff efficiency and safe practices.
  • Promotes a positive attitude and working environment through open communication, trust, recognition and reward and accountability.
  • Supervises food service and production employees consistently in order to develop skills, model proper food prep approaches, promote product consistency and positive communication.
  • Ensures that all food and beverage service areas are well staffed, supplied and prepared to perform their functions to a high standard.
  • Professionally represents the company to all current and potential F&B vendors through ongoing communication that includes face-to-face meetings, email, phone and/or scheduled conferences and conventions.
  • Works with the F&B team and/or outside vendors to explore, test and incorporate new menu choices that increase revenue, reduce expense and/or elevates property reputation and customer satisfaction.
  • Establishes and maintains a strong method of effective and consistent communication with team members.
  • Compiles data, creates reports and monitors daily outcomes to ensure adequate labor, supply, equipment functioning and efficiency.
  • Ensures staff training and enforcement of all alcohol service rules.
  • Sets clear expectations of the F&B team, reviews progress and provides productive feedback and guidance while holding staff accountable.
  • Establishes and maintains an efficient food ordering and supply inventory program to ensure proper storage, quantity and purchase price using industry standard resources and technologies.
  • Develops and implements those departmental policies and procedures that support great service, efficient and consistent food preparation, skill development and personal accountability.
  • Maintains the highest level of quality and safety standards through consistent enforcement of food preparation and service certification and rules, safe kitchen practices, food storage and delivery procedures, staff injury prevention training and reporting.
  • Implements and maintains an efficient and secure food and liquor access control system.
  • Ensures fair and consistent enforcement of all applicable policies and procedures, including the Bay Mills Indian Community Personnel Policies and Procedures and approved department procedures.
  • Works closely with the F&B management team to ensure consistency of practice throughout F&B services areas, fair application of policies and rules, efficient implementation of new product or procedure and team accountability to established goals and objectives.
  • Consistently reviews staffing needs based on customer counts, scheduled events and recommends adjustments in staffing levels and hours of operation to coincide with business demands.
  • Ensures that all required employee paperwork, including status changes, evaluations, disciplinary action, compliance forms, address and tax information, is completed and submitted to the necessary department in a timely manner.
  • Ensures the timely payment and recording of all F&B invoices using the property purchase software.
  • Consistently evaluates food and drink sales data to identify high and low performance and considers adjustments based upon sales, industry trends and customer feedback.
  • Works closely with Accounting and IT teams to ensure that all revenue is captured and reported in an accurate and relevant manner.
  • Works closely with the Marketing department to ensure the development and advertisement of daily specials, event promotions and accuracy of menus, etc.
  • Ensures that all team members are trained and aware of the emergency procedures, including property evacuation, active shooter, MSDS, hazard identification and control.
  • Must attend all mandatory trainings designated by the Human Resources Department and/or immediate Supervisor, including TIPS and Title 31 training.
  • Performs and ensures compliance with the Bay Mills Gaming Commission Rules and Regulations.
  • Maintains a gaming license in good standing with the Bay Mills Gaming Commission
  • Seeks and maintains certification with approved industry training and certification programs; participates in pre-approved conventions, hospitality and food shows and other relevant training and networking opportunities in order to maintain strong knowledge of industry trends for the property.
  • Other duties may be assigned within the scope and complexity of this position’s essential functions.

PHYSICAL REQUIREMENTS:

While performing the duties of this job, the employee is regularly required to stand for extended periods of time. The employee must bend, squat, climb, crouch, kneel, and push/pull. The employee must occasionally lift and/or move up to 100 pounds while frequently lifting and/or moving up to 75 pounds. The employee is regularly exposed to dust and cold when working in the freezer and coolers. The employee is regularly exposed to marked changes in temperature and humidity and moving machinery, moderate noise, heat, cold, smoke and hot surfaces involved in cooking food, grease and dirty surfaces, use of caustic chemicals. The employee may experience cuts, burns, sprains and strains.

POSITION REQUIREMENTS:

  • Bachelor’s degree in restaurant management, business management or equivalent and/or certification from a culinary school required.
  • Ten years’ experience in a high paced restaurant environment required.
  • Must have at least five years’ management experience in maintaining a high level of food quality, customer service and cleanliness in an upscale hospitality operation.
  • Must be able to obtain a gaming license through the Bay Mills Gaming Commission and maintain eligibility throughout employment.
  • Experience in feeding large numbers of persons a superior product is a must.
  • Must have a positive, outgoing personality.
  • Must be willing to work nights, weekends and long shifts for varied events that include F&B services.
  • Must possess strong administrative, organizational, and communication skills as demonstrated through past work experience.
  • Must have excellent working knowledge of computers, including F&B point-of-sale systems.
  • Leads by example, works alongside your fellow employees to ensure proper presentation and to enforce teamwork.
  • To perform this position successfully, an individual must be able to satisfactorily perform each function listed under the essential functions and physical demands categories of this position description.
  • Must have an excellent past work record, including attendance.
