The Chocolatier is responsible for overseeing chocolate production at the Equestrian Manor. This role works closely with the Executive Pastry Chef to support the daily creation of chocolate bonbons, bars, garnishes, structures, and other chocolate-based items.
The ideal candidate will have extensive knowledge of chocolate-making techniques, including tempering, spraying, molding, dipping, and enrobing. A passion for delivering exceptional customer service is essential, as the role involves producing standardized bonbon recipes, chocolate structures for pastry displays, and seasonal buffet enhancements, including large showpieces.
Primary Responsibilities:
- Develop and test new chocolate recipes, experimenting with a variety of flavors and ingredients.
- Ensure the chocolate display case is consistently stocked, well-maintained, and visually appealing.
- Expertly temper chocolate to achieve the desired texture and shine, and mold or shape it into various forms.
- Oversee the entire chocolate production process, ensuring each batch meets the highest quality standards and complies with food safety regulations.
- Assist with packaging and presentation, ensuring all chocolate creations are attractively displayed for guests.
- Fulfill custom orders for individual and corporate clients, including the creation of unique and branded chocolate products.
- Exhibit excellent communication skills, fostering a positive and collaborative work environment.
- Provide friendly and professional guest service, always maintaining a positive attitude.
- Ensure full compliance with all health and safety regulations, including maintaining ServeSafe certification

Qualifications, Education, Experience, Skills, and Abilities:

- Proven Chocolate making skills such as tempering, molding, enrobing, Dipping.
- Familiar with different Cocoa Butter decorating techniques.
- Trained in current, modern chocolate decorating techniques.
- The ability to use various chocolate decorating instruments and tools.
- Detail-oriented.
- Artistic and creative.
- Excellent time management and organizational skills.
- Excellent communication skills, both with the team and with guests.
- ServeSafe certification or equivalent.
- Positive attitude and professional appearance, with a commitment to maintaining high standards of guest service.
