Assistant Food and Beverage Manager

The primary purpose of this position is to provide excellence in products, services, cost controls and sales in all areas of the Food & Beverage Operation. This position also assists the Events Manager with member and private events as needed.

DETAILED JOB RESPONSIBILITIES

General

  • Follow the food and beverage manual, which reflects service standards, food quality production, portion, cost control, while conforming to State Health Department Codes.
  • Follow beverage procurement guidelines, Liquor Control Board requirements and observe responsible alcohol beverage service to protect from liability.
  • Maintain cleanliness and organization in all food and beverage areas.
  • Complete opening and closing checklists.
  • Assist in the promotion of food and beverage activities.
  • Conduct daily walk-through to ensure the facility is safe and presentable and that courtesy and efficiency are being exercised throughout. Report any maintenance issues, as necessary.

Member Dining

  • Greet members and guests throughout their dining experience.
  • Assist the back of house staff and servers as needed including, but not limited to, being a food runner, setting up buffets/stations, and performing maintenance, to ensure the food and beverage operation is running smoothly.
  • Serve as a hostess and seat members, as necessary.
  • Assist in ensuring maintenance of health and safety protocols.
  • Manage all dining reservations for regular member dining and events, and take orders for any pre-ordered event meals.
  • Create daily floorplans of dining spaces to bet accommodate seating requests.
  • Format and print menus for guests and servers as needed.

Staffing and Supervision

  • Directs, evaluates and supervises food and beverage employees on a daily basis.
  • Proactively communicate with staff regarding important information pertaining to food and beverage operations or the guest experience.
  • Ensure staff follow policies and procedures, as well as maintain the highest standard in service.
  • Prepare and submit bi-weekly employee schedules and bi-weekly payroll summaries. Adjust actual schedules to ensure efficient use of employees.
  • Assign server tables/sections on a daily basis.

Ordering, Inventory, and Budget

  • Manage and monitor daily accurate activity and financial requirements, ordering of products, stock levels and monthly inventory.
  • Communicate with members and wine representatives regarding wine orders and invoice members appropriately.
  • Check beverage prices against current inventory log to verify any price changes and update as needed.

Communication and Marketing

  • Attend all food and beverage related meetings..
  • Promote and market member dining to the membership including, but not limited to the promotion of menus, hours of operation, and event schedules.
  • Make changes to the food and beverage information on the website including, but not limited to, menus, staff bios, and hours of operation.
  • Update prices and add buttons as needed in Jonas for food and beverage.
  • Run daily reports in Jonas at the end of each business day and send daily sales to the food and beverage team.
  • Assist in determining front of house gratuities and reporting it to payroll.

Other

  • Assist the Events Manager where needed.
  • Act on behalf of the Events Manager in their absence.
  • Other duties as assigned by supervisor.

MINIMUM CANDIDATE QUALIFICATIONS

  • Culinary or hospitality degree and at least two years’ experience in management of a food and beverage operation OR any equivalent combination of experience and/or education from which comparable knowledge, skills and abilities have been achieved.
  • Maintain Food Handler’s Certificate.
  • Excellent customer service skills and a positive attitude.
  • Experience leading and mentoring a team.
  • Strong organizational skills and attention to detail.
  • Strong technical literacy including the Microsoft Office Suite, basic website and social media experience, and experience with a variety of software.
  • Ability to manage/resolve conflict in a confident, yet customer-friendly manner.
  • Professionalism, with a sense of urgency.
  • Meets state minimum age to serve alcohol.
  • Ability to monitor customers for signs they have had too much alcohol.
  • Capacity to be on your feet for long hours.
  • Ability to bend, stoop, kneel, rotate, climb, stand, push, lift, grasp, and reach.
  • Ability to lift, carry, and move objects up to 50 pounds.
  • Ability to work in various extreme weather conditions.
  • Willingness to work with or around sharp utensils, harmful chemicals and/or flying golf balls.
