RESPONSIBILITIES
Operational Leadership
Direct and oversee all daily restaurant operations, ensuring efficient, high-quality service during all operating hours, including peak periods, special events, and game-day environments. Establish, monitor, and enforce service standards, cleanliness, and operational procedures. Serve as Manager on Duty and lead floor operations as required. Collaborate with culinary, beverage, marketing, and casino partners to ensure seamless operations.
Guest Experience
Champion a guest-first culture by proactively addressing guest needs, concerns, and service recovery issues. Monitor service execution and guest feedback to drive continuous improvement. Support and execute promotions, entertainment, and special events aligned with sportsbook and casino initiatives.
Team Leadership & Labor Relations
Lead, coach, and develop union-represented team members in a fair, consistent, and respectful manner. Enforce workplace policies, performance standards, and accountability in compliance with the CBA. Conduct employee coaching, documentation, corrective action, and performance evaluations in partnership with Human Resources. Maintain open, professional communication with union representatives and management.
Scheduling & Staffing Management
Develop and manage labor schedules in alignment with business needs, seniority rules, and contractual requirements. Monitor staffing levels and productivity throughout service periods and adjust as needed. Ensure accurate timekeeping, attendance tracking, and labor reporting.
Financial & Inventory Management
Manage financial performance, including labor, food, and beverage costs. Oversee inventory controls, ordering, receiving, and proper storage standards. Ensure compliance with cash handling procedures, POS accuracy, and internal controls. Analyze sales trends and operational data to drive profitability and efficiency.
Compliance, Safety & Policy Enforcement
Ensure compliance with responsible alcohol service laws, food safety standards, and health codes. Uphold gaming regulations, casino internal controls, and departmental policies. Promote a safe working environment and ensure proper incident reporting and follow-up. Coordinate with Casino Security and other departments as required.
REQUIREMENTS
Experience
Minimum of 3–5 years of restaurant management experience in a high-volume sports bar, restaurant, or casino environment. Prior experience working in a unionized hospitality environment strongly preferred. Must be at least 21 years of age.
Knowledge
Strong knowledge of food and beverage operations, service standards, and financial controls. Demonstrated leadership, coaching, and conflict-resolution skills. Ability to manage diverse teams while maintaining positive labor relations. Proficiency in Microsoft Office applications (Outlook, Word, Excel). Ability to perform financial analysis related to labor, inventory, and cost controls.
Environment
Fast-paced, high-energy sports bar within a casino setting. Frequent interaction with guests, union-represented team members, and casino leadership. Professional appearance and adherence to casino grooming and uniform standards required.
License
Ability to obtain and maintain required gaming licenses and background clearances. Responsible alcohol service and food safety certification (or ability to obtain).
