Quality Assurance
Maintains consistent food quality for all Food & Beverage outlets. Responsible for maintaining established quality assurance procedures to ensure acceptable health department and customer service standards. Ensures customer service standards are followed by all team members and addresses issues as they arise. Monitors results through inspection, evaluation, and analysis; makes changes if necessary, to achieve goal.
Compliance
Maintains current knowledge and ensures enforcement of all gaming laws and regulations which apply to the functions and duties of the Food & Beverage department for which this position is responsible. Responsible for ensuring regulatory compliance within area of authority and reporting potential issues to Executive Management/GM.
Goals
Develops, implements, and manages operational goals and monitors achievements of performance and profit objectives. Responsible for the overall achievement of departmental customer service goals. Maintains food costs and labor percentiles. Creates effective and efficient schedules, while maintaining labor costs, meeting staffing objectives, and achieving guest satisfaction.
Leadership
Responsible for the oversight of Food & Beverage Back of House leadership staff. Responsible for the development and implementation of menus for all food outlets.
Assist
Assists Director/VP with the implementation and updating of the Food & Beverage inventory Control System.
Procedure
Achieves desired results through established methods, procedures, and guidelines to maintain designated standards and high-quality service. Responsible for maintaining cost control methods and procedures by monitoring consistent pars and inventory.
Budget
Responsible for assisting in the budget process for the department by providing recommendations; ensures compliance to departmental budget initiatives; reports budget concerns to manager.

Ability to maintain a high level of confidentiality and professionalism. Ability to maintain a high level of energy and take a proactive and strategic approach to dealing with issues. Ability to work collaboratively and communicate effectively with team members at all levels of the organization.
Education & Experience
Bachelor’s degree (B.A./B.S.) in culinary or related field; five (5) years of related experience and/or training; or equivalent combination of education and experience. Supervisory or management experience in hotel and/or casino environment required.
Communication
Must have excellent written and verbal communication skills; must be fluent and literate in English. Must have the ability to interact with guests, staff, and colleagues and resolve problems and conflicts in a diplomatic and tactful manner. Ability to effectively present information and respond to questions from groups of managers, clients, customers, and the general public. Ability to write reports, business correspondence, and procedure manuals.
Knowledge
Must have extensive Food & Beverage knowledge. Must be proficient in Microsoft Office applications (Excel, Word, and Outlook). Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.

Initial placement within the salary range is based on an individual's relevant knowledge, skills, and experience.
