Essential Job Responsibilities
- Support the Room Chef in all aspects of food quality, cost control, inventory management, and back‑of‑house training.
- Document recipes, measurements, quantities, and preparation procedures to ensure accurate and consistent production.
- Train culinary staff on recipes and monitor adherence to preparation and presentation standards.
- Ensure all prep items and recipes are produced according to approved specifications.
- Oversee the service line, monitor cook performance, and maintain pace and quality during high‑volume periods.
- Maintain thorough knowledge of all food products and ensure proper labeling, dating, storage, and rotation.
- Prepare and coordinate daily prep sheets with the Room Chef to ensure appropriate production levels.
- Provide leadership, mentoring, coaching, and corrective counseling for the culinary team.
- Assist with interviewing, selecting, onboarding, and developing new back‑of‑house team members.
- Create and coordinate staff schedules and assist with payroll‑related activities as needed.
- Communicate effectively with front‑of‑house leadership to ensure seamless service flow and operational alignment.
- Assist the Room Chef with menu development, daily specials, and creative culinary initiatives.
- Manage food inventory and costs in partnership with the Room Chef, ensuring accuracy and cost efficiency.
- Receive and inspect deliveries to verify that products meet property standards.
- Participate in financial review processes by researching information, responding to inquiries, and accurately reporting results.
- Safely operate all kitchen equipment and use cleaning/sanitizing products according to SDS and departmental guidelines.
- Report equipment malfunctions, unsafe conditions, or unusual situations to management immediately.
- Maintain compliance with company safety policies, food safety laws, and all regulatory requirements.
- Demonstrate reliability, accuracy, efficiency, and strong time‑management skills.
- Maintain required uniform and appearance standards and a friendly, approachable demeanor.
- Work independently with minimal supervision or collaboratively as part of a team.
- Perform other job-related duties as assigned.
Education & Experience
- Culinary degree preferred but not required.
- Minimum of 2 years of cooking experience.
- High school diploma or equivalent required.
- Must be 18 years of age or older.
- Must successfully pass all required pre‑screening and background checks.
- Internal candidates must have at least six months in current role with no active corrective action in the last six months.
- Ability to work a flexible schedule including days, evenings, late nights, weekends, and holidays.
- Must obtain and maintain all required work cards or non‑gaming registrations per local jurisdiction.
