What are the responsibilities and job description for the Line Cook position at The Mercantile Kitchen & Bar?
KEY RESPONSIBILITIES
Food Preparation & Execution
- Prepare and cook menu items according to recipe and presentation standards
- Prep, set up and stock assigned station before service
- Maintain proper portioning and consistency
- Ensure all food is cooked and plated correctly
- Follow ticket times and maintain urgency during service
- Communicate clearly with expo and kitchen team
Station Management
- Keep station clean, organized, and fully stocked throughout shift
- Label, date, and rotate products using FIFO methods
- Notify management of low inventory or prep shortages
- Complete opening and closing sidework responsibilities
Sanitation & Safety
- Follow all food safety and sanitation procedures
- Maintain clean cutting boards, utensils, and work surfaces
- Properly store food items at safe temperatures
- Follow NYS health department regulations and restaurant standards
- Use equipment safely and responsibly
Teamwork & Communication
- Work professionally with BOH and FOH staff
- Communicate shortages, delays, or mistakes immediately
- Support fellow cooks during busy service periods
- Accept coaching and feedback professionally
- Maintain a positive and respectful attitude under pressure
PERFORMANCE EXPECTATIONS
- Consistent food quality and presentation
- Ability to work efficiently during high-volume service
- Strong communication with expo and kitchen staff
- Clean and organized station at all times
- Reliable attendance and punctuality
- Ability to multitask and maintain composure under pressure
QUALIFICATIONS
- Previous kitchen or cooking experience
- Ability to stand for extended periods
- Ability to lift up to 50 lbs
- Ability to work nights, weekends, and holidays
- Strong sense of urgency and attention to detail
- Knowledge of basic kitchen safety and sanitation standards
Pay: From $25.00 per hour
