Lemaire Cook

Lemaire, the acclaimed restaurant at The Jefferson Hotel, is seeking a skilled and motivated Seasonal PM Line Cook to join our culinary team. This role is ideal for a hardworking and efficient professional who brings strong cooking skills, attention to detail, and consistency to the kitchen. A sense of urgency, timing, and quality is essential, along with the ability to safely operate kitchen equipment and maintain high food preparation standards.

Key Requirements

• Availability: MUST be able to work a flexible evening schedule, including weekends and holidays.
• Experience: Minimum 2 years of line cook, or professional kitchen experience required.
• Skills: Strong cooking skills, safe handling of kitchen equipment, and ability to follow recipes and chef instructions.
• Work Ethic: Dependable, punctual, and focused; committed to maintaining high standards of food quality and safety.

Basic Functions & Scope

• Prepare and cook menu items according to recipes, standards, and chef direction.
• Maintain cleanliness, organization, and safety at assigned kitchen stations.
• Ensure consistency, accuracy, and timely execution of dishes during evening service.
• Properly label, store, and rotate food items according to established standards.
• Support chefs and fellow cooks in maintaining smooth kitchen operations.

Duties & Responsibilities

• Prepare ingredients and complete mise en place before service.
• Cook and plate menu items according to established recipes and presentation standards.
• Safely operate knives, cooking equipment, and kitchen utensils.
• Maintain a clean and organized workstation, equipment, and storage areas throughout service.
• Monitor food quality, portion sizes, and cooking times.
• Communicate with chefs and kitchen team members to coordinate orders and maintain service flow.
• Assist with receiving, storing, and rotating deliveries as needed.
• Follow all health, safety, and sanitation regulations.

Qualifications

• Minimum 2 years of professional kitchen or line cook experience.
• Experience working in a from-scratch kitchen.
• Strong cooking skills and ability to work with speed, accuracy, and consistency.
• Ability to stand for extended periods and lift, push, or pull up to 50 lbs.
• Dependable, punctual, and professional in appearance and behavior.
• Positive attitude, willingness to grow, and collaborative spirit.
