- Tenure that shows stability in prior roles (3-5 years at a comparable restaurant)
- Greenmarket experience is required
- Strong line cook capabilities
- Proficient in ordering, line checks, and quality spot checks
- Fabrication skills are a plus
- Proven ability to expedite up to 700 covers per service
- Experience working in a high-volume, chef-driven restaurant
- Ability to maintain exceptional food quality, consistency, and execution during peak service
- Strong understanding of seasonal ingredients and farm-to-table cuisine
- Must be local to the New York City market
- Strong leadership skills
