Duties
- Prepare and assemble a variety of sushi, sashimi, and other Japanese delicacies with meticulous attention to detail and presentation.
- Maintain high standards of food safety, sanitation, and hygiene throughout all food preparation processes.
- Collaborate with kitchen staff to develop innovative menu items that reflect authentic Japanese flavors while accommodating guest preferences.
- Manage ingredient inventory, ensuring freshness and proper storage of seafood, rice, vegetables, and other supplies.
- Execute precise knife techniques for slicing fish and vegetables efficiently and safely.
- Ensure timely delivery of dishes to guests while maintaining quality standards during busy service hours.
- Assist in training junior kitchen staff on sushi preparation techniques and safety protocols.
Experience
- Proven culinary experience in fine dining or Japanese cuisine establishments, with a focus on sushi preparation.
- Strong background in food handling, food safety practices, and kitchen operations within the food industry.
- Demonstrated expertise in menu planning, meal preparation, and catering services related to Japanese or Asian cuisine.
- Excellent knife skills with the ability to prepare ingredients efficiently while maintaining safety standards.
- Experience working in restaurant environments that emphasize high-quality food service and customer satisfaction.
- Familiarity with dietary department procedures and dietary aide experience is a plus for accommodating special guest needs.
