Job Description
- Oversee daily kitchen operations and production management
- Create and maintain master prep sheets and individual prep sheets
- Ensure food quality through proper checks, labeling, dating, packing, and sealing to spec
- Manage inventory control, ordering, and supply management
- Review invoices for correct costs and quantities
- Handle staff scheduling and labor control
- Collaborate on menu development, including standard, seasonal, and special event menus
- Ensure compliance with local, state, and federal food safety codes and regulations
- Make independent, store-level leadership decisions in the absence of the Chef de Cuisine
- Hard skills: Knowledge of cooking techniques, procedures, and kitchen systems operations; understanding of food costing models, menu mix, and engineering models; knowledge of food service sanitation and safety guidelines; proficiency in spreadsheet, database, and word processing tools; TB clearance required
- Soft skills: Passionate culinarian with a strong palate and sense of presentation; strong leadership and delegation abilities; effective team builder who motivates and develops kitchen staff; detail-oriented and highly organized under time constraints; calm and decisive under pressure; holds staff accountable while fostering a positive work environment
