Duties
- Shape sourdough dough into uniform loaves using traditional techniques and modern equipment
- Ensure proper dough handling, fermentation, and proofing processes are followed for optimal results
- Operate bakery machinery such as proofing cabinets, dough dividers, and shaping tools safely and efficiently
- Maintain cleanliness and organization of workstations to meet food safety standards
- Assist in preparing ingredients and managing production schedules to meet daily bakery targets
- Conduct quality checks on shaped dough for consistency in size, shape, and appearance
- Collaborate with bakers and production staff to optimize shaping procedures and improve product quality
Skills

- Strong knowledge of bakery equipment including proofing cabinets, dough dividers, and shaping tools
- Familiarity with safety standards in food production environments
- Excellent manual dexterity for precise shaping of doughs using hand tools and techniques
- Experience with bakery shop math, measurements, and quality control procedures
- Understanding of fermentation processes, gluten development, and dough handling best practices
