About the Role

A healthcare organization is seeking a Registered Dietitian (RD) to oversee dietary and nutritional services within a skilled nursing environment.

The role combines clinical nutrition expertise with departmental oversight, including resident nutritional assessments, care planning, menu development, food service quality, dietary staff supervision, regulatory compliance, and budget management.

The Registered Dietitian works closely with residents, families, nursing teams, physicians, and other interdisciplinary stakeholders to ensure nutritional needs are appropriately assessed and supported.

Key Responsibilities

  • Oversee the dietary department and provide supervision and direction to dietary staff.
  • Ensure resident nutritional needs are met in accordance with clinical standards, care plans, physician orders, and regulatory requirements.
  • Participate in department leadership meetings, resident-at-risk meetings, and interdisciplinary care planning meetings.
  • Manage food and supply purchasing within established budgets.
  • Provide technical and administrative guidance on diet planning, menu development, food preparation, and regular and therapeutic diets.
  • Ensure menus reflect resident nutritional requirements, preferences, physician orders, and applicable regulations.
  • Conduct diet-history interviews with residents and families when appropriate.
  • Maintain accurate records of resident food preferences and nutritional information.
  • Review nutritional progress documentation for accuracy and completeness.
  • Visit residents periodically to assess meal quality, preferences, and nutritional needs.
  • Complete nutritional components of MDS, CAA, resident care plans, progress notes, nutritional assessments, diet cards, and other required documentation.
  • Monitor weekly and monthly resident weights and collaborate with nursing staff on appropriate nutritional recommendations.
  • Monitor meal service to ensure meals are nutritious, properly prepared, appealing, timely, and consistent with prescribed diets.
  • Verify appropriate meals and snacks are provided to residents with special dietary requirements.
  • Monitor food production, standardized recipes, menus, food preparation, and storage procedures.
  • Oversee tray-line operations and meal service to maintain quality and timeliness.
  • Ensure adequate food and supplies are maintained for disaster preparedness requirements.
  • Assist with dietary staff assignments, priorities, and departmental scheduling.
  • Ensure compliance with sanitation, food safety, infection control, fire safety, and other applicable procedures.
  • Conduct regular sanitation inspections of kitchens and related areas.
  • Assist with developing corrective action plans following state, federal, or quality assurance surveys.
  • Maintain departmental records, budgets, equipment, and supplies.
  • Monitor equipment and work areas to ensure they remain clean, safe, and properly maintained.
  • Review resident diet information and care plans and recommend changes in collaboration with residents, families, nursing staff, and other care providers.
  • Establish procedures to ensure dietary equipment is operated safely by trained and authorized personnel.
  • Participate in Quality Assurance and Performance Improvement (QAPI) initiatives.
  • Perform additional duties as required.

Requirements

  • Bachelor’s degree in Dietetics, Nutrition, or a related field.
  • Minimum 1 year of dietitian experience in a healthcare or skilled nursing environment preferred.
  • 1–2 years of management or supervisory experience preferred.
  • Knowledge of MDS, care planning, and clinical documentation standards.
  • Understanding of federal and state regulations governing dietary and nutritional services.
  • Current registration with the Commission on Dietetic Registration (CDR).
  • State licensure as a Dietitian where required.
  • ServSafe certification or ability to obtain certification within 90 days of employment.
  • Strong computer skills.
  • Ability to meet applicable state and federal background-check requirements.
  • Strong communication, organizational, and interpersonal skills.
  • Ability to work collaboratively within an interdisciplinary healthcare environment.
