Protein Production Specialist

Job Overview
The Protein Production Specialist is responsible for the daily operations of the Protein Pack Room (PPR). This individual ensures that high-quality protein is safely processed, packaged, and prepared for distribution to our network of partners. This role combines technical machinery operation with strict adherence to food safety standards and inventory accuracy. The Specialist plays a key part in transforming bulk donations and regional sourcing into nutritious, accessible portions for our neighbors.

Duties

· Represent Second Harvest of the Big Bend to volunteers in a professional and courteous manner, demonstrating the core value of stewardship by nurturing the relationship with those who help us carry out our mission.

· Greet and train volunteer groups.

· Ensure the area is ready for volunteers. This includes, but is not limited to, making sure all product, pallets, boxes, tape, trash receptacles, and tools are in place when volunteers arrive.

· Operate, monitor, and maintain high-speed packaging equipment and related production line machinery.

· Assist in the execution of a metrics and reporting program, to include reporting on production goals and demand fulfillment.

· Perform routine equipment setup, breakdown, and basic troubleshooting to minimize downtime and ensure production targets are met.

· Monitor seals, weights, and packaging integrity to ensure all finished products meet quality and shelf-life standards.

· Provide daily supervision of Volunteers and Temporary Staff associated with the daily operation of the Protein Pack Room

· Maintain an "audit-ready" environment by following all USDA, FDA, and Feeding America food safety guidelines.

· Execute Daily/Weekly sanitation SOPs (Standard Operating Procedures) for the production room and equipment.

· Maintain accurate HACCP (Hazard Analysis and Critical Control Points) logs, including temperature monitoring and lot tracking for all protein processed.

· Accurately record production data, including incoming bulk weights, yields, and final case counts, within the inventory management system.

· Coordinate with the Sourcing and Inventory team to manage "First-In, First-Out" (FIFO) rotation for raw materials and finished goods.

· Assist in the staging and loading of finished protein packs for warehouse storage or immediate distribution.

· Perform regular quality checks on raw protein inputs to ensure products meet freshness and safety specifications.

· Provide guidance and safety training to volunteers or temporary staff assisting in the packaging area.

· Collaborate with the Production Manager to identify bottlenecks and suggest improvements for workflow efficiency and output.

· Other duties as assigned.

Requirements

· Must become certified in ServSafe.

· Experience in a nonprofit setting is a plus

· Always represent the organization in a professional, pleasant, and courteous manner

· Maintain positive public relations and exceptional customer service

· Excellent project management skills; ability to organize and prioritize work and tasks

· Ability to work independently with minimal supervision

· Attention to detail, accuracy, and timelines

· Ability to communicate verbally and in writing in a clear, professional, and timely manner

· Ability to travel within Big Bend service area

· Ability to travel statewide or nationally for trainings and conferences

· Computer proficiency in Microsoft Excel, Word, PowerPoint, and Outlook. The ability to both learn and use various management information systems

· Must possess a valid Florida Driver’s License and clean driving record
