Position Summary
The Assistant Stewarding Manager supports the Stewarding Manager in overseeing the daily operations of the stewarding department across all food & beverage outlets. This leader ensures the highest standards of cleanliness, sanitation, organization, and efficiency while maintaining compliance with health and safety regulations. The role requires strong leadership, operational organization, and the ability to thrive in a high-volume resort environment.
Key Responsibilities
- Assist in managing day-to-day stewarding operations for restaurants, banquet events, and catering functions
- Supervise, train, and motivate stewarding team members
- Ensure proper cleaning and sanitation of kitchen equipment, cookware, dishware, and service areas
- Maintain compliance with all health department and food safety standards
- Oversee dish machine operations and chemical usage to ensure safety and efficiency
- Monitor inventory of cleaning supplies, chemicals, and smallwares
- Coordinate with culinary and banquet leadership to ensure event readiness
- Assist in scheduling staff based on business levels and event needs
- Promote a culture of teamwork, safety, and accountability
- Step in as department lead in the absence of the Stewarding Manager
Qualifications
- Previous stewarding or kitchen leadership experience required
- Supervisory experience preferred
- Knowledge of sanitation standards and food safety regulations
- Ability to lead in a fast-paced, high-volume environment
- Strong communication and organizational skills
- Flexible schedule including evenings, weekends, and holidays
Physical Requirements
- Ability to stand and walk for extended periods (8 hours)
- Frequent bending, lifting, pushing, and pulling
- Ability to lift and carry up to 50 pounds regularly
- Ability to push heavy dish racks and equipment carts
- Exposure to heat, humidity, steam, cleaning chemicals, and wet floors
- Manual dexterity to operate dish machines and cleaning equipment
- Ability to work in a fast-paced kitchen and banquet environment
